Some aspects of molecular mechanisms of xenobiotics' hepatotoxicity and hepatoprotection : Modulatory roles of natural polyphenols

Background & Aims: Oxidative stress and apoptosis are proposed mechanisms of cellular injury in studies of xenobiotic hepatotoxicity. The aim of this work is to find early signal markers of drug-induced injury of the liver by focusing on select antioxidant/oxidant and apoptotic genes. As well, to address the relationship between conventional liver dysfunction markers and the measured mRNA and protein expressions in the D-galactosamine/lipopolysaccharide and tert-butylhydroperoxide hepatotoxicity models. Furthermore, potential hepatoprotective capabilities of antioxidant polyphenols quercetin and curcumin were evaluated in relation to its modulation of the oxidative stress and apoptotic parameters in the given xenobiotic hepatotoxicity models. Methods: Biochemical markers testing the hepatic function included aminotransferases (ALT, AST) and bilirubin. Measurements of TBARS and conjugated dienes were used to assess lipoperoxidation. Plasma levels of catalase and reduced glutathione were used as indicators of the oxidative status of the cell. Evaluation of veterinary inspection in food safety

Healthy hygiene surveillance is carried out at all stages of the production process, from raw materials to the sale of animal products. The aim of this diploma thesis was to evaluate the results of inspections of the food processing industry which are carried out by the State Veterinary Administration of the Czech Republic (SVA CR). The specific focus was on the monitoring for foreign substances and the results of hygienic inspections done in food processing industry, mainly in dairy sector. Regular monitoring was the likely cause for the steadily decreasing number of positive findings in the samples which were tested for foreign substances. In the evaluation of the veterinary and hygiene audits carried out by the SVA CR, it was found that the dairy sector attained superior results as compared to other animal product sectors.

Přehled chemických vlastností, způsobu získávání včetně jejich dalších vlastností, kvůli kterým se tyto produkty získávají. Rozlišení jednotlivých druhů medů, které se vyskytují v ČR a v zahraničí. Dále specifikace cizorodých látek (pesticidy, antibiotika, těžké kovy). Porovnání výsledků testování v ČR a zahraničí v posledních letech. Určení trendu výskytu cizorodých látek v medu. Zjištění obecného povědomí o této problematice u lidí v produktivním věku
Inhibiční látky v mléce a způsoby jejich detekce

The bachelor work deals with occurrence of inhibitory substatnces in milk and thein detection. They pose a gray concern since they cause problems during the milk processing procedures as well as they may reprepresent possible health risk. There are described individual groups of the inhibitory substances in the milk in this thesis, identified possible sources of contamination and their possible effect. Further on there are discussed possible sources of contamination, including usage of medication, maximal residual limits and prevention of milk contamination in general. Last part deals with detection methods of the inhibitory substances categorized in variol ways.
