Comparison of nutritional and utility value of tubers in selected cultivars of table potatoes

The aim of this bachelor thesis was to evaluate the differences in the content of selected nutritionally significant substances and evaluation of cooking quality for the selected set of varieties of consumer potatoes. A general introduction to the issue is contained in the literary overview. In 2019, a small-scale experiment was established in Lukavci with 6 varieties of consumer potato varieties and 1 variety for processing into starch (as a contrast control). Cultivation took place under the conditions of conventional cultivation technology. The crop was harvested by hand on 11. 10. 2019. Subsequently, samples were taken for chemical analysis. The experiment evaluated the average tuber weight, dry matter content, N-substances and protein content, total polyphenol content and total antioxydant activity. The table value of tubers was assessed through a cooking test with a panel of evaluators. All data obtained were statistically evaluated and processed into graphs.

This diploma thesis deals with the sensorial and analytical evaluation of varietal juices from apples. All the juices were made from apples from the orchad of Faculty of Horticulture in Lednice. Together was assessed a total of nine varieties. The theoretical part of the thesis deals with the origin, distribution and utilization of apples in the processing industry, the technology of production of apple juice, its individual basic substance components, conditions and methods of sensory analysis of food. For all samples was carried out analytical and sensory evaluation. The juices produced were sensorially evaluated by the following parameters: appearance and colour, consistency, taste and aroma, intensity of taste after swallowing and overall rating. In the context of analytical reviews were established: titratable acids, soluble solids, content of total polyphenols, ascorbic acid and Malic acid content. The results obtained from the analytical and sensory evaluation were graphically and statistically evaluated.

This work deals with chemical composition analysis of prehistoric artifacts of copper and copper alloys in Czech lands. It purvey listing of individual methods of natural sciences research together with their capabilities and limitations. Development and current state of chemical compostition analysis is described in this work. Focus of this work is a database of results of chemical composition analysis from Czech and foreign laboratories. Data file in the database is evaluated in terms of geography, chronology and type of artifacts.
