The main target of this bachelor work is describe cultivation technology, significant content substances, present range of varieties and show possibilities of cultivation in Czech republic. Cynara scolymus L., Globe Artichoke, is a perennial thermophilic vegetable belonging to Asteraceae or Compositae family. Its stem grows to a height of two meters and at its end flower buds are created, which have a variety of colours after flowering. For consumers' purposes they are harvested unopened, the other parts of the plant are also used. Its extensive healing effects have been helping human bodies since the ancient times. The origin of an artichoke can be found in the Mediterranean, from where it has gradually spread throughout the world. In the Czech Republic, artichokes aren't grown mainly due to unfavourable climate. Their cultivation requires a lot of care, they like deep, fertile, humus-rich soils. That's why the Europe's biggest growers are Italy, Spain, France and Greece. Currently there are registered many different varieties of artichoke, which differ in size and shape of the flower buds, spinose of bracts or flower colour. Based on the findings of the experiment can be stated, that under the conditions of the Czech Republic, the most appropriate location was south Moravia. Suitable varieties could be ´Green Globe´ and ´Spinoso Sardo´. For verification would be good to continue in the experiment.

The Globe Artichoke (Cynara scolymus L.) is native to the Asia Minor and North Africa, where it spread further into the rest of the Word from. Artichoke was domesticated mainly in the Mediterranean, where it is cultivated the most nowadays and also serves as a part of common cuisine. The Globe Artichoke is grown for its delicious bittersweet flavour and therapeutic effects. The consumer part are unopened flower heads which consist of pappy bracts and fleshy flower base. The most valuable part is the 'heart', but all parts of plant can be used. This plant has an excellent dietetic, choleretik, antioxidant and diuretic effects, sometimes even aphrodisiac effects. The Globe Artichoke is thermophillic perennial plant, susceptible to frost damage. The artichoke requires well-fertilized, loamy soil for their growth. Their width is one meter in diameter. They are known many different varietes of green, violet, spiny and non-spiny artichoke.
