Analysis of VOC Frankovka wines originating in the Modré hory region
Horáková, Lenka ; Machát,, Jiří (referee) ; Diviš, Pavel (advisor)
This diploma thesis deals with the chemical characterization of Frankovka red wines and the possibility of using chemical analysis of wines to distinguish Frankovka wines from VOC Modré hory from other Frankovka wines from the Moravian wine region. The theoretical part describes viticulture in the Czech Republic, the characteristics of the Frankovka variety and the wine classification system in the Czech Republic. The next part describes in detail the association VOC Modré hory, the red wine technology and the use of chemometry for wine authentication. The experimental part deals with the determination of the elemental profile of wines by ICP-MS and ICP-OES methods, analysis of selected phenolic substances by HPLC-MS and analysis of organic acids by IC. Furthermore, the analysis of the aromatic profile of wines was performed using the technique HS-SPME-GC-MS and the total content of phenolic substances in wines was determined by the MAS method. A total of 24 wine samples were analyzed, where 12 samples came from VOC Modré hory and another 12 wines came from other Moravian wine regions. Statistical analysis techniques (Mann-Whitney U-test and PCA) were used to classify wine samples into groups in order to separate wines from VOC Modré hory and other wines from other Moravian regions. The results of this work showed that with the help of chemical analyzes and statistical techniques it was possible to distinguish wines from VOC Modré hory from other wines from the Moravian wine region.

Šlancar, Jan
This thesis deals with the characteristics of two wine micro-regions and VOC associations which originated on this territories. Characterizes the local terroir, historical, climatic and geological conditions. It deals with the monitoring of selected analytical parameters in the variety Blaufrankisch on the trails belonging to the VOC Modré hory and in the variety Welschriesling from vineyards belonging to the VOC Pálava during their maturation.
Termíny a způsoby regulace násady hroznů a význam pro kvalitu hroznů
Hromek, Zdeněk
The thesis was written at Mendel University in Brno, Faculty of Horticulture in Lednice at the Institute of viticulture and vinemaking. In this task, I dealt with various options of regulation the quantity grapes, suitable term for realization of regulation quantity grapevine and its effect for grapes quality. The task is separated into two parts. The literary part of the task deals with qualitative parameters of berry vine, agrotechnical interventions that affects the maturation and grapes quality, and possibilities of regulation the quantity grapes. The second part was experiment executed on the blue grape variety Lemberger. Regulation was done in five versions and two ways of quantity regulation. These regulated options were compared with the control option without regulation. The evaluation of the experimental results states, that the regulation of grapes in the variety Lemberger has a positive effect on the quality grapes. From the perspective of qualitative parameters appears to be the most suited option halving of grapes on the plant within 30 days after flowering. The correct timing of regulation and method of execution is very important. In conclusion, the regulation of quantity grapes should be an integral part of modern viticulture.
Porovnání rosé vín vyrobených z odrůdy Frankovka
Horák, Ondřej
The aim of this thesis was to evaluate the sensory and analytical properties of selected rosé wine varieties Lemberger from the site of VOC Blue Mountains. In this work they were produced samples of rosé wines from different vineyards. Samples were made a single technologies. From the analytical values were determined for wines alcohol content, reducing sugar content, pH, titratable acidity, content of glycerol content of nthocyanins content of flavanols, polyphenols, antiradical value and volatile substances. All samples were evaluated by 100 points system according Balik and Veverka. Top samples were evaluated from vineyards Bojanovska (Velké Pavlovice) Novosady(Němčičky) and Terasy (Bořetice).
