Clotting of cow and goat milk

The thesis deals with two technological properties determining the quality of milk, clotting and fermentation ability by titrable acidity, which are influenced by a large number of factors. The aim of the work was to assess the influence of milk composition, breed, order and stages of lactation on clotting and souring ability of cow and goat milk based on obtained analysis. Detailed analysis focused primarily on cow milk.
Fatty acid composition of caprine milk and milk products

Changes occur in milk during the technological processing of raw milk, which also affect the properties of milk fat. Dairy products may have different properties compared to the raw milk. Chemical and microbial processes can alter the presence and distribution of individual fatty acids and thus influence the nutritional value of the product. The aim of this thesis was to assess the presence of fatty acids in milk fat of goat milk and to evaluate differences in the spectrum of fatty acids in goat milk and yoghurt produced from it.
Factors affecting composition of goat milk

The Bachelor thesis deals with composition of goat milk and effects influencing changes in the composition of goat milk. Goat milk is a product, quality of which is affected by a large number of factors. The outcome of this thesis is classified information about factors affecting the amount and composition of produced goat milk; the factors are divided into three main categories - biological factors, nutritional factors and factors of technology and management. Nutritional factors, in particular amount, quality and nutritional properties of feed and water, most affect the amount and composition of produced milk. Another essential factor is a genetic disposition which includes the individuality of the goat, its breed and pedigree. Among the other significant factors which affect quality of goat milk, we can classify health, age, lactation phase, technology and hygiene of milking, housing and treatment and a climate. Less important factor is e.g. earliness of weaning kids. All the factors are interconnected. Neglecting several less important factors can significantly negatively affect the composition of goat milk even though extraordinary care will be given to factors that are considered essential (and vice versa). Therefore it is important to take into consideration all factors involved, from the process of creation of goat milk to its manufacture.

This paper is concerned with synchronic analysis of the biblical text. The text has been analyzed according to various narrative methods, as presented in the manual by J. L. Ska. The Book of Jonah is an extremely complex and elaborated text. It is basically a narration, determined by a precise Hebrew syntax. In the Book of Jonah, we may find three interlaced plots. This fact makes of the book, one of the shortest books in the Old Testament, a precious literary masterpiece. The most secondary literature affirms that the main theme of the Book consists in God{\crq}s grace and mercy. But the narrative analysis discovers also the importance of the prophet himself, who is a splendid image of the mankind, and his wonderful complexness.
