Comparison of pasta manufactoring in Europe and Asia

This bachelor thesis deals with differences between manufacturing technologies of European and Asian noodles. First part concentrates on wheat as a basic raw material for noodle production. Structure and chemical composition of wheat grain, growing conditions, Triticum durum are described. Next part considers wheat flour, the most important product made of wheat, its manufacturing, storage, defects, and kinds. Semolina made of Triticum durum wheat is mentioned. In more detail it concentrates on classification and manufacturing technology of pastes booth in Europe and Asia. Further it considers other raw materials used and also additives that are used in order to improve nutritional value, color, and taste of final products. In conclusion there is a summary of differences among raw material and the additives used in pasta and noodle production. Lastly the manufacturing technology comparison of European pastes and Asian noodles is done.
Characterization of elder juice on the basis of some chemical parameters

This study is about characteristic of eldberry juice based on selected chemical properties. In the theoretical part, it is described botanical characteristic, including place of origin and spread. This part is also about the healing effects of elderberry and cultivating and improving of this plant is also mentioned there, together with some varieties of elderberries. In the experimental part, there were made some determinations the same for wild variety of elderberry and for cultivated elderberry. There were not found significant differences in relative density between both samples. According to pH, the more acidic is the cultivated variety of juice and this juice also contains higher content of organic and mineral acids, reducing sugars and citric acid. On the other hand the wild variety juice contains higher total content of amino acids and mineral solids.
Dyes of red and white wine cultivars

Theoretical part of this bachelor thesis contains informations about dyes of red and white grape species. At the beginning there is described component composition of grape berry. The biggest attention was paid to colour of red wine species. It deals with their common characterization, stabilization of their behaviour during production and storage wine. This work includes short recherche of their determination methods. Than there are mentioned colour of white wine cultivars. In another chapter there are described process of freeze drying otherwise lyophilization procedure. This method was used in experimental part while grape sample manufacturing. Grapes were immediately frozed on the dry ice after their separation. Skins were separated from pulp in nitrogen atmosphere and than these skins were lyophilizated.
Possibility of determination of selected flavonoides

The theoretic part of the bachelor‘s thesis deals with description of selected flavonoids as apigenin, quercetin, luteolin, keampferol, rutin, myricetin and with options of their determinations. There were described typical properities and effects of several flavonoids at first. In the next part there are principles of methods, especially high-performance liquid chromatography and capillary electrophoresis. The biggest attention was made to literary survey of determination flavonoids coumpounds mentioned above, by high-performance liquid chromatography and capillary electroproresis. There were described the collection of plant material for extraction of flavonids in the practical part. The white and blue grapes were frozen by dry ice as soon as they were separated from a busch. Grapes were made in a nitrogenous atmosphere and lyophilizated after the frozen.
Less conventional botanical sources of cosmetic raw materials

The aim of this bachelor’s thesis is an investigation of use of less traditional plant sources in cosmetic industry. This review is focused on black elder (Sambucus nigra), sea buckthorn (Hippophae rhamnoides), quince (Cydonia oblonga), dog rose (Rosa canina), and stinging nettle (Urtica dioica). The substances Isolated from these plants can be used in various cosmetic products. The first section of this search deals with history and botanical characterization of these plants. The next section deals with significant substances contained in these plants and their use not only in cosmetic industry.
Elderberry juice, characteristics and possibilities its utilize.

Subject this bachelor´s thesis is elderberry juice, its characteristics and possibilities its utilize. At the first part of the theory is described elderberry, its species and chemical structure. There are mentioned the possibilities process of elderberry, including of producing fruit juices. The possibilities of utilize elderberry in medicine are outlined at the latter part of the theory and there are described microorganisms, whose contaminate could reach devaluation of elderberry juice, which can be used in the products health nutrition. Next there is described method whose help determined mineral elements in elderberry juice. The experimental part consinder of determination of microbial purity and the determination of quantity mineral elements in elderberry juice.
The dietary accessories to support of overweight reduction

This bachelor´s thesis deals with the possibility of using alternative sweeteners to reduce overweight and treat type 2 diabetes. In the experimental part of this thesis was verified the minimal effect of reduced calorie sweetener Extra-Linie from Favea Ltd. including erythritol on blood glucose concentration.
Diseases and defects of wine

This bachelor thesis deals with wine diseases and defects. The goal of this work was to make literature research aimed at diseases and defects, which can occur in wine, and to describe their possible agents, mechanisms of formation and eventually present solutions of their elimination, if possible. The thesis is also briefly concerned with the history of viticulture in Czech Republic, the processing of grapes and the production of wine.
Utilize of instrumentality PSE (Pressurized Solvent Extraction) in food analysis

This bachelor thesis is engaged in the modern method of extraction PSE (pressurized solvent extraction). There have been two types of this apparatus, One PSE and Fast PSE. In this thesis, the apparatus and its behavior is described. Extraction of anthraquinones, strychnine, berberine, glycyrrhizin, ligustilides from medical plants is presented below. These substancies are used mainly in treatment for various diseases. In this work is noticed trace elements, tocopherols, alkylbenzene sulphonate, isoflavone, dionine, betacarotene, vitamin E, polyphenol extracted from biological samples. Utilization of the substancies from biological samples is very different. Some one decreased risk of osteoporosis, cardiovascular disease, cancer and other is by contrast deleterious toxin. High attention is devoted to substancies presented in food such as polychlorinated biphenyls, various pesticides, lipids, oxysterols. These substancies are in food rather undesirable than is why their amount is determinated to the food isn´t deleterious.
Fruit utilizing occasion of less knowing bushes

This bachelor thesis deals with cornelian cherry (Cornus mass). The beginning of the thesis treats with botanical characteristics of cornelian: description of the plant, its expansion, reproduction and location. There are described selected species, agricultural outplanting of the cornelian, its harvest and categorization to market kinds according to regulation of Ministry of Agriculture. Attention is given to actual substances contained in its fruits, especially vitamin C, which is presented in high amount there. This shrub includes many other important substances, like natural dyes - anthocyanins, minerals, organic acids, proteins, pectines, sugars, pulp and others. Fresh fruits are used mainly in food and cosmetic industry. At the end there are mentioned methods for determination of vitamin C by high performance liquid chromatography. The other possible ways how to determine vitamin C are titration method, spectroscopical method, polarographic method and gas chromatography.
