Problems of added sugars in our population

This bachelor thesis focuses on the intake of the added sugars among the population of young adults, particularly among the adults in the group of 30 to 45 years of age. The theoretical part of this thesis provides a brief overview of the saccharides based on their chemical composition and elementary classification. The sugars and the natural as well as the synthetic sweeteners and their use in the food industry are then discussed in detail. The concepts of naturally occurring and added sugars are described including the related legislative requirements for food labeling and nutritional recommendations issued by the international and national institutions. The special attention is devoted to the role of sugars in nutrition and to the health risks arising from an excessive sugar intake. The research part of the thesis includes a survey carried out in the form of a questionnaire aiming to investigate, in particular, the consumption of the sweetened soft beverages, the fruit products and the breakfast cereals and to defend the hypothesis that the chosen group of the population consumes the added sugars in an excessive amount. Diet system from the perspective of macronutrients and micronutrients

The aim of the thesis: The aim of this observational study of non-interventional nature, was to map the representation of macronutrients and selected micronutrients in the menus served to patients suffering of gastritis as well as other nutrition diets. Additionally, to research and review the dietary systems in healthcare facilities of the Czech Republic, in order to compare the obtained data with recommended nutritional intakes, as recommended/stated in the issue "Reference Values for Nutrition Intake". The purpose is to evaluate, whether both types of the diets follow the recommended values. Methodology: The source of the data for this thesis were the menus distributed to patients following the recommendations of norms related to gastritis and rational nutrition diets for the period of one week. By applying the "Nutriservis PROFESIONAL software" the content of studied macronutrients and selected micronutrients in the daily menus was determined in the collected data. Results: Ten selected healthcare facilities from six regions in the Czech Republic participated in the research. Eating habits of health care professionals

This bachelor thesis deals with eating habits of nutrition therapists and nurses and with influence of shift work on boarding of nurses. It also dedicates to risks of eating disorders in both groups. It consists of two parts. In the theoretical part are described principles of healthy eating, issues of shift work and characteristic of eating disorders. The practical part uses the questionnaire to find out how the dietary habits of nutrition therapists and nurses differ. The aim is to find out whether nutrition therapists eat better than nurses on the basis of their education, and how shift work affects boarding of nurses. The results are processed into graphs and tables. The results show that general nutritional recommendations follow more nutrition therapists than nurses. Furthermore the questionnaire shows that more than 50% of nurses eats irregularly and the main reason for skipping meals during the night shift is lack of time. It has also been found that a large percentage of nutrition therapists have begun to study their field to get more information about nutrition. The Comparison of Nutrition in Selected Countries of the World

This bachelor's thesis focuses on nutrition in selected developed and developing countries, it describes its development from 2000 to present. People around the world are at risk of malnutrition, one because of surplus, the other one because of deficiency. There is a characteristic of nutrition and malnutrition in the theoretical part of the thesis. There is a comparison in terms of intake essential nutrients, food and occurrence of malnutrtion in the practical part. Based on the obtained indicators, it was found that the nutrition status in none of the observed countries was good, but it was approaching to an ideal status in Japan. The bachelor thesis "Nutritive valuable substances in bakery products" firstly describes important nutrition substances, which may occur in bakery products such as complex carbohydrates, fibre, antioxidants and many more important substances. In the following parts author deals with: chemic composition of alternative crops used in bakery production, various types of seeds (mostly flax seeds, sunflower seeds and sesame seeds), which may be used for enriching products and composition of products used for fine pastry filling. Thereinafter the author focuses on nutrition recommendations, which are relied to the bakery products and compararing of selected products. The final part of the thesis is dedicated to research, which shall provide customer preferences in the selection of bakery products.
The Specificity of Geriatric Patients' Nutritional Needs

The final thesis The Specificity of Geriatric Patients' Nutritional Needs deals with the issue of nutrition at old age and foremost of nutrition of geriatric individuals. These form a special group of patients. The main meaning of this thesis is to report on the investigated issue. This is nowadays due to the ri- sing number of the geriatric patients a very current topic. The thesis has two parts - the theoretical and the practical one. The theoretical part deals with the elucidation of the key terms, description of the diet systems and outlining of the demographical development in the Czech Republic. The thesis also describes the hospital bed capacities for geriatric patients. The practical part compares the approaches to the geriatric patients nutrition described in the domes- tic publications and the diets really provided to the geriatric patients in the Czech Republic. For these pur- poses, two geriatric workplaces were chosen - Clinic of Geriatrics of General University Hospital in Prague and The Department of Geriatrics at the Thomayer Hospital. The focus of the comparison was mainly on the values related to the intake of energy, proteins, saccharides, fats, vitamin D and calcium, iron and zinc mine- rals.
