Safety of the selected food supplements in terms of the presence of additives Additives are commonly present not only in food, but also in food supplements. Safety of these substances remains a question. The aim of the theses is to evaluate the safety of the best selling supplements in the Czech Republic in the year 2011 from the viewpoint of additives and constituents. Given the scale of researched products, I focused on products strengthening the cardiovascular system containing omega 3 fatty acids , garlic, coenzyme Q 10 and lecithin. As a source of information about the content and the presence of additives, the data from the Ministry of Health and the Information System decision of the Chief Hygienist (IS RoHy) were used. The safety evaluation of additives was carried out on the basis of the available methodology for consumers. Information about adverse effects of additives and content substances were searched using information databases Martindale , Reprotox, AltMedDex, Drugdex, National Center for Complementary and Alternative Medicine (NCCAM), IPCS INCHEM, PubMed independent commission database JECFA Joint FAO / WHO Expert committee on Food additives. Objectives: To assess the effectiveness and risks of selected dietary supplements containing Vaccinium macrocarpon, Serenoa repens, Cimicifuga racemosa, Glycine max and Silybum marianum. Food additives of plant origin: analysis of traditional and conventional use

This bachelor thesis summarizes the knowledge about food preservation including methods of preservation by using food additives of plant and synthetic origin. In order to survive and secure themselves for unfavorable times, it was necessary for people to invent methods of food preservation for extending their shelf-life, but foremost to ensure food safety. First part of thesis summarizes issues of food preservation. There are mentioned traditionall used methods for preservation since the beginning of preservation and also description of food additives. Concurrently domestic and foreign international organisations, which handle food additives issues, are mentioned. Furthermore there are described possible risks to human health, caused by food additives. Thesis defines preservatives, antioxidants a their main role in food industry. Important point of this thesis is also an attempt to describe substances of natural origin as suitable alternatives to synthetic additives. In the following there is part about medicinal plants including herbs and spices used as preservatives and additives with antioxidant activity. The aim of this study was to analyse the plants traditionally used for food preservation. However, neither satisfying references about traditionally used plants for preservation were found and nor were confirmed. For this reason was chosen group of plants, which were used as spices in food processing since acient times, for analyses. In scientific browsing databases were found records about chosen plants and their antibacterial and antioxidant activities and about their testing in food models. The result is a list of plants with proven antibacterial and antioxidant effects in vitro studies investigating their potential use in food preservation. Some species, which were not in food models tested, were identified with a potential preservative effect, so it opens the door for possible further investigation.

This Bachelor thesis deals with the issue of polyphosphates (phosphates) used in the technology of meat production and with their impacts on human organism. The first part of the thesis focuses on history and gradual development in use of polyphosphates in the meat-processing indusrty. It explains what the polyphosphates and their qualities are and what functions they perform in the food processing industry, meat production in particular. The second part, the main one, describes properties of individual polyphosphates, their characteristics and purposes of their use in the meat-processing industry. The last one cover the methods of determination of phosphates in meat products, which help us control the level of these substances in final products.

This thesis focuses on the major allergens in food that are dangerous for allergic individuals. Currently eight major allergenic foods are known but still new allergenic foods are added to the list. The thesis describes characteristic of these allergens including the structure and stability to various factors. Allergenic potential of the additives is mentioned. The thesis also includes information about essential functions of the immune system and its components. It explains the classification of negative reactions to food and their basic mechanisms. One chapter is devoted to food allergy symptoms, which appear after consumption of food containing allergens. It also presents the topic of cross-reaction and the major food allergens detection methods. Due to the importance of food allergens, scientists try to harmonization of detection of these allergens all over the world. In conclusion, the thesis provides information about labeling of food allergens.

The aim of this work is to deepen the knowledge about additives in foods, the importance of technological additives in foods, their properties and effects on human health. The aim of this work is a study of technical and scientific literature on the topic: "additives in foods and their properties" and review of the literature. Also in the practical part, implementation and evaluation of a questionnaire survey of the experimental group related to the topic: "Validation and comparison of knowledge among the younger population and an aging population on the issue of additives in foods and their properties."
