The issue of high-risk micronutrients, specifically calcium, vitamin D, and zinc in children on vegan and vegetarian diets

Veganism and vegetarianism are among the dietary trends with increasing popularity. As one of the diets that excludes a certain food group, the risk of deficiencies of certain nutrients in the diet needs to be addressed. For children, these deficiencies may be even more risky. This thesis focuses on selected potentially risky nutrients whose levels have been investigated in the paediatric population. Aims: The aim of this thesis was to assess whether there are differences in blood levels of zinc, calcium and vitamin D between vegetarians, vegans and omnivores. A secondary aim was then also to compile recommendations for parents in the form of an educational leaflet with information on dietary information for vegetarianism and veganism with regard to zinc, calcium and vitamin D. Methodology: The data used in this thesis were collected as part of the first phase of the KOMPAS study. Whole families eating a homogeneous diet, either vegan, vegetarian or omnivorous participated in the study. Mapping the nutritional quality of plant based meat alternatives on the Czech market

1 ABSTRACT The main objective: The goal of the thesis is to evaluate the nutritional quality of selected plant-based meat alternatives available on the Czech market, including the evaluation of the degree of their fortification with nutrients that may be deficient in people with a plant- based diet. A summary table containing basic data, nutritional values, and the composition of the individual examined products will be completed. Methods: A total of 225 plant-based meat alternatives (PBMAs) offered in several selected online stores in the Czech Republic were included in the study. PBMAs of the 1st or 2nd generation - those that mimic meat and meat products with their properties - were included. Data were collected in a summary table in Microsoft Excel. Basic data, scoring systems, nutritional data, protein-providing ingredients, raw materials, additives, and fortifying ingredients were collected. PBMAs were divided into categories according to the imitated meat product. The data were collected between December 2023 and April 2024 and were subsequently evaluated in the R programming language. The first part consists of the theoretical bases related to business activities. The second part focuses on the analyses of the business environment and the results of the primary research. Plant-based alternatives to dairy and meat products and their nutritional value

This bachelor thesis focuses on exploring plant-based alternatives to milk, dairy, meat and meat products. The thesis is divided into two parts, theoretical and practical. The theoretical section examines the nutrients found in milk and meat, ingredients used in plant-based alternatives to dairy and meat products, the nutrients they contain and their impact on human health. In the next chapter I summarize the legislation concerning meat and milk, this is followed by a chapter examining ultra-processed foods (which include plant-based alternatives to meat and dairy), and another chapter focused on vegetarianism - characterizing its different types, explaining its benefits and risks and describing its history. The primary objective of this thesis was to investigate public awareness of plant-based alternatives to milk, dairy and meat products, with a secondary goal of comparing the views of vegetarians and vegans to non-vegetarians. The first part of the practical section is an evaluation of an anonymous non-standardized questionnaire. Vegan activism: Czech Republic and Thailand

The diploma thesis analyse vegan activism in the Czech Republic and Thailand. The aim of the work was to investigate the methods and techniques used by vegan activists and the contextual elements influencing the movement. The work used the theoretical framework of comparative and contextual analysis. The first chapter of the thesis provided an overview of social movements and concepts for their study. The next chapter explained the data collection methods and ethical aspects. The empirical part analyzed the methods, actors and environment of vegan activism in both countries. The research questions focused on the analysis of strategies and tactics of organizations in the Czech Republic and Thailand to promote veganism, as well as on how local cultural factors influence the practice and acceptance of vegan activism, as well as on the main challenges and obstacles that the movement faces. The results showed that vegan organizations in both countries focus on online activism, but with slight differences in their strategies. Cultural factors such as tradition and religion influence the practice and acceptance of veganism in each country. Nutritional deficiences in vegan endurance athletes

Aim: This study aimed to investigate whether vegan endurance athletes, specifically runners, experience nutritional deficiencies due to a purely plant-based diet. Partial goals were set to evaluate whether these athletes have sufficient energy intake and receive adequate macronutrients and risky micronutrients. Methods: The research was conducted as a pilot study for the extensive European project VEGANScreener. Based on the completed questionnaire and meeting the criteria, 11 participants (n = 11) were selected. The subjects underwent body composition analysis using bioimpedance, their resting energy expenditure was measured by indirect calorimetry, and blood was taken. The subjects then performed a 4-day food record (self-reported 4-day Dietary Record), which was analysed using new software. The complete dietary record was analysed for only eight subjects (n = 8). Nutritional data were analysed using the left-sided Mann- Whitney U test, which belongs to the group of non-parametric tests. The test was conducted at a significance level of α = 0.05. Results: The average BMI of the subjects was 20.87 ± 1.58 kg/m2. Two subjects (n = 2) had a lower body fat percentage than is adequate. Stravovací návyky ve školní jídelně u žáků střední odborné školy

This bachelor thesis is focused on the eating habits of vocational high school students. The work consists of two parts, theoretical and practical. The aim of the theoretical part is to describe the diet of students in the school cafeteria and the specifics of adoles-cents’ diet, further to define terms such as consumer basket, veganism, vegetarianism, food allergies, food pyramid, etc. The methods used in the theoretical part are a review of scientific literature, creating notes, followed by their analysis and synthesis. In the practical part, the aim is to elicit the degree of satisfaction of students with the offer of food in the school cafeteria. We are also interested in aspects of the motivations of students to eat in the school cafeteria, whether they are satisfied with the choice of meals or what meals they would welcome, as well as what are the meal choices for stu-dents with special eating habits. A quantitative strategy and a questionnaire method were used. The questionnaire was designed for the purposes of our survey. The respond-ents are students of a selected high school in South Moravia. The results are presented in tables. The conclusion of the bachelor thesis contains the results, the literature used and appendices. Conclusions and draft recommendations for pedagogical practice are formu-lated.
