Aroma profile of cheese analogues
Studýnková, Hana ; Cetkovská, Jitka (referee) ; Vítová, Eva (advisor)
The aim of this bachelor thesis was to generally characterize cheese analogues and to identify the content of flavor and aroma active ingredients in chosen samples of analogues. Cheeses were manufactured at the Tomas Bata University in Zlín. The introductory section explains what generally processed cheeses and cheese analogues are, including their production. The importance, use and properties of cheese analogues are also described. The microstructure and changes during storage are also mentioned. Particular importance is devoted to their physicochemical and organoleptic characteristics. In the experimental section aroma active compounds of 3 types of processed cheese analogues containing various vegetable fats were identified and quantified. Cheese flavoring compounds were isolated by SPME method (solid phase microextraction) and assessed by gas chromatography. 5 groups of various aromatic compounds in different amounts: alcohols, ketones, aldehydes, fatty acids and esters were found. Finally, the cheese analogues and fats used were compared.
The assessment of aroma active compounds in elderberry juice
Lukačková, Adéla ; Divišová, Radka (referee) ; Vítová, Eva (advisor)
This work deals with the assessment of aroma active compounds in elderberry juice. In the theoretical part, the characteristic of elderberry, including species, varieties of elderberries, content compounds and use is described. The production of fruit juices and SPME-GC method, which has been chosen for assessment, is shortly summarized here. In the experimental part, identification and quantification of aroma active compounds in 11 samples with various content of elderberry juice combined with other type of fruit juice, diluted or not diluted with water, was made. The fiber CARTM/PDMS 85 µm was used for extraction of aroma compounds. 43 aromatic compounds were identified in total 5 aldehydes, 7 ketones, 18 alcohols, 5 esters and 8 fatty acids. The most of all aroma active compounds were determined in sample containing 10% of elderberry juice with 50% of apple juice and 40% of water, but some of them were not identified. The most of all compounds identified were determined in commercially acquired concentrated elderberry juice sample from Austria.
Probiotics and their importance in human nutrition
Formanová, Kristýna ; Vítová, Eva (referee) ; Vránová, Dana (advisor)
A great deal of immune system is located in the colon thanks to a large number of microbs that influence not only digestive tract of a human. The contact of these microbs with the digestive tract of a human is very important for other development of immune defensive mechanisms and the natural immune response, which supports health of a host. That is why in recent years a great deal of attention and efforts have been paid to possibility of human health status improving by a modulation of the intestinal microflora. As probiotics are indicated living microorganisms, that can have positive effects on human health and some species, for example Saccharomyces boulardii, have positive effects in prevention and treatment of many diseases associated with diarrhea. The company Valosun a.s. has provided for testing the probiotic food supplement which is suitable in acute diarrheal disorders. This product has been tried by patients of gastroenterology ambulance. The aim of sociological survey was to map knowledge of respondents in the field of probiotics and probiotic food supplements.
The possibilities of the assessment of volatile fatty acids
Svítilová, Lenka ; Zemanová, Jana (referee) ; Vítová, Eva (advisor)
This bachelor's thesis deals with common characteristics of fatty acids by description of the structure and terminology of volatile fatty acids, by description of the characteristics and areas of their occurrence. Then possibilities of identification of volatile fatty acids are charted, to which gas chromatography, gas chromatography-mass spectrometry, high performance liquid chromatography, solid phase microextraction, spectrophotometry and isotachophoresis belong. Gas chromatography is the most frequently used method of the detection of volatile fatty acids. During the assessment these substances are mostly converted to methylesters because of their chemical characteristics.
The possibilities of the assessment of aroma active compounds in elderberry juice
Kolibačová, Silvie ; Vránová, Dana (referee) ; Vítová, Eva (advisor)
This bachelor thesis is a literature research, which deals with the characteristics of black elderberry, its occurrence, types and how to use it particularly in medicine and food industry. The next section describes the production of fruit juices and methodologies for the determination of aromatic compounds in elderflower juice, which were selected for future measurements. This is the method solid phase microextraction (SPME) and gas chromatography (GC). Almost a hundred different volatile compounds are given in the literature, which are located in different cultures of elderberry and their presence and quantity are dependent not only on the culture, but also on the season, the environment and the method that was used for extraction and determination of aromatic compounds.
