Zhodnocení chovu plemene Wagyu v podmínkách konkrétního chovu v ČR

The Bachelor thesis is devoted to a comprehensive evaluation of Wagyu meat breeding on Horky farm, as it is a very rare product in the Czech agriculture. In the first part of the thesis, I focus on the overall evaluation of the breeding using meat performance indicators, namely: carcass yield, average daily gain, JUT weight, pre-slaughter weight, weight differences among 120, 210 and 365 days and reproductive traits, which are processed using mathematical and statistical methods in the period 2016-2019. In the second part, I focus on the economic evaluation of the farm during the period 2019-2022, in which the SWOT analysis method was used, followed by an evaluation of the cost and revenue structure of the farm. Lastly, an analysis of ratio indicators, i.e. profitability, activity, indebtedness and liquidity, was made. The calculated values show that the farm is loss-making in 3 out of 4 years due to the high costs, long fattening period and lower reproduction.

The aim of the diploma thesis was to determine the effect of altitude on reproductive and productive indicators of the breed Suffolk. Two farms were compared with different altitude from the year 2016 to 2020. In those years, reproductive indicators were analysed - average fertility, breeding, fertilisation, birth weight. The effect of different altitude was found in all of those indicators. When it comes to fertility indicators, the following were analysed - weight, the height of the subcutaneous fat and the muscle at 100 days, and the average daily growth. The highest statistically significant difference was found in 2019, specifically in the subcutaneous fat height at 100 days.

The aim of this bachelor's thesis was to determine the meat yield of fattening bulls in the same breeding conditions and to analyze the reaction of each breed separately to the same level of nutrition. A total of 43 bulls were selected for evaluation, which passed through the farm in Něchov near Trhové Sviny within two years. Groups of bulls were compared according to the year of slaughter, breed and blood share of the breed. Age at slaughter was ascertained and live weight, carcase, daily gain, net gain and SEUROP classification, conformation and fat cover classes were compared ac-cording to different breeds in the same diet. Data processing was performed using the Microsoft Exel program. The average slaughter weight of Charolais hybrids was 733.98 kg at an average slaughter age of 697 days. It was identical with hybrids of the limousine-Ne breed, which reached an average slaughter weight of 741.65 kg. A larger birth was not found in the average carcass weight, which reached 403 kg in the Charolais breed and 407 kg in the Limousine breed. There was always at least one weaker bull in both groups, as well as a bull that exceeded the average of the others. The weak piece in the Charolais breed included a bull with an average daily gain of 683.59 g / day (av-erage 994.82 g / day) and in the limousine breed 749.6 g / day (average 1005.03 g / day). The strong bull had a net gain of 680.58 g / day (average 579.82 g / day) in the Charolais breed and 720 g / day in the limousine (average 585.25 g / day). The classi-fication of carcasses in the SEUROP system was analyzed according to the propor-tion of blood of individual breeds. Charolais crossbreeds with a charolais> 50% share were 100 % included in the AU2 group, on the contrary, with a charolais 50 % blood content in the AU2 group only in 31 % and the rest belonged to the AR2, AO2 groups and one bull was in the BO2 group, for -they was older than two years. The results did not show a statistically large difference between the individual breeds. The difference between the years was also not statistically significant, which indicates the stability of breeding and nutrition conditions. The only difference was between the groups of the breed with different proportions of blood. Individuals with a charolais> 50 % share achieved a better classification in SEUROP than those with a Charolais blood share lower than charolais 50 %. In the limousine breed, the difference in blood ratio was not so drastic, but bulls with a blood ratio of limousine> 50 % reached 17 % of the AE2 group.

In mountain and foothill areas, sheep farming is very suitable in the agricultural sector. Its popularity is still growing, and its enormous advantage is that sheep graze the land even in hard accessible areas and thus contribute to landscape maintenance. The aim of the bachelor's thesis is evaluation of meat efficiency of two selected meat breeds of sheep in a selected breeding. It is focused on Suffolk and Charollais breeds. To achieve this goal, a set of data obtained from yield control database SCHOK (Association of Sheep and Goat Breeders), based on which the meat efficiency was evaluated. Specifically, these were average daily gains, weight in 100 days, muscle height and fat in 100 days. Subsequently, the obtained data were compared to the literature and with data of the national average from KU (efficiency checks).
Bull meat efficiency of national cattle population and its crossbreeds with beef breeds

Cattlebreeding in the Czech Republic since 1990 has recorded significant decrease in numbers of kept animals but the quality of product - that means meat and milk has increased. The situation is characterized by good quality products but in comparison with developed countries low consumption of these products per person a year. The aim of this diploma work was to analyse result of fattening performance of Czech Pied Cattle bulls and their crossbreeds with beef breeds. In the evaluation were included 245 bulls - crossbreeds with meat breeds Blonde d´Aquitaine (BA) - 52 bulls, Charolais (CH) - 37 bulls and Simmental (MS) -38 bulls. The control group was made by 118 bulls of the Czech Pied Cattle - 684,1 kg and Charolais - 656 kg. Both groups had the highest intensity of growth. Charolais - 1 153 g and Blonde d´Aquitaine 1 072 g. These results corresponded to the weight of carcass that made up by MS crossbreeds 380.4 kg and by Charolais 365 kg. The highest proportion of meat showed out groups MS (78.9%) and at the same level Charolais (78.7%). The lowest amount of kidney fat was found by group Blonde d´Aquitaine. The highest content of the nitrogen substances (21.75%) and at the same time the lowest content of the intramuscular fat (1.73%) was showed up by the Blonde d´Aquitaine group. The lowest content of the nitrogen substances (19.39%) and the highest content of the intramuscular fat were showed out by the control group of the Czech Pied Cattle.
Histologická analýza kosterní příčně pruhované svaloviny skotu

Primary goal of this thesis is comparing microscopic parameters of muscle fibre to macroscopic trait of beef carcass by histological analyzis of tissue from Czech Fleckvieh. As the main parameters were analyzed by microscopic muscle fiber width and the width interstitial ligament. These parameters were compared among each other for verifying the measurement accuracy and also carcase weight, age slaughtered animal, and classification according to the system SEUROP. This thesis proceed comparing each macroscopic effects to microscopic traits of beef muscle fibre.
Zhodnocení růstové schopnosti telat na vybrané rodinné farmě

The Bachelor thesis deals with the growth ability of calves at a chosen family farm and it is divided into two parts. In the theoretical part, significance of cattle bree-ding and meat yield indicators are defined, such as the fattening performance of fatted cattle and slaughter value. Furthermore, influences affecting meat yield are described including sex, breeding affiliation, stabling system, nutrition, feeding and other influen-ces. The second part of the work focuses on an experiment pursuing a chosen group of bulls that were given dairy as well as vegetable nutrition, weighted and observed, on the basis of which average daily growths are calculated. At the end of this study, it was found out that the farm achieves very favourable growths. When calves were given dai-ry nutrition, the growth reached 1.83 kg/day and when fattened intensively to gain higher slaughter weight, the growth was about 1.86 kg/day.
Zhodnocení výkrmnosti plemene limousine v podmínkách České republiky

The bachelor thesis focuses on the determination of limousine breeding in the Czech Republic through the descriptive and comparative method, specifically in the company ZD Skály. The aim of this work is to assess fattening in limousine cattle in the monitored rearing. The work also includes a treatise on the history of breeding, the current state of the breed in our conditions and control of utility properties, then it deals with the meat performance and the effects that affect it. The growth ability of bulls at 120, 210 and 365 days and the comparison of increases in the observed breeding bulls ZD Skály with the population included in the testing in the Czech Republic in 2015, 2016 and 2017 were evaluated. In conclusion, it was found that the highest average achieved values above the population level in all monitored parameters were in the Company in 2015. In the following years, in the case of birth and weight gains at 120 and 210 days, there was a decrease below the population level, but the average increase for the test and weight at 365 days were above average in all observed periods.
