How school meals work in the Czech Republic in the 21st century in terms of raw sobriety

This bachelor thesis is called "How school meals work in the Czech Republic in the 21st century in terms of raw material sobriety". Eating habits are developed from an early age. Of course, family background is a big part of this, but the school environment also plays an equally important role in shaping dietary habits. The theoretical part deals mainly with nutritional recommendations for school-age children, other recommendations in nutrition and with the food pyramid. It also discusses the importance of school meals, its history, legislation and, last but not least, the HACCP system and the principles of good manufacturing and hygiene practice. A total of 8 informers were involved in the research part, of which 2 informers were the heads of the examined school canteens in Písek, the remaining informers were the cooks there. A qualitative method was applied to collect the data using semi-structured interviews, observations and analysis of the documentation. For the practical part, 3 goals were chosen. The first objective was to focus on the suppliers of raw materials, including the frequency of supply and the quality of provided raw materials. The second objective was to evaluate the processing the ingredients into tasty and nutritionally balanced meals. The last goal was to map the current state of food and nutrition in school canteens from the perspective of raw material modesty. The results revealed that the raw materials are ordered every day, the vegetables are delivered 2-3 times a week, the meat basically every day and the durables once a week. As the school canteens check the freshness of the delivered raw materials. If some raw materials come in poor quality, the manager will return them to the supplier. Neither of the examined canteens complied with all nutritional recommendations and thus the required nutritional parameters were not met. In terms of tastiness of prepared meals, the school canteen II achieved better results. However, it should be mentioned that the canteens differed greatly in the amount of leftovers. From the provided documents, it was found that they try to have simple recipes and use as few ingredients as possible. However, but seasonings and higher amounts of salt are still part of the recipes.
Nutrition in diseases of civilization prevention

The bachelor's thesis deals with the origin and occurrence of diseases of civilization and the possibilities of their prevention from the nutrition point of view. It focuses on the consumption of macronutrients and micronutrients in food with regard to the possible risk of these diseases as well as their protective effect. The theoretical part briefly deals with selected diseases and risk factors involved in their emergence, prevention and health promotion, and lastly focuses on nutrition as one of the leading determinants of health. The practical part focuses on the goals and related hypotheses, on the basis of which a questionnaire survey was conducted related to the interest in the composition of food, the impact of nutrition on the incidence of diseases of civilization and knowledge of nutritional recommendations. It also summarizes the characteristics of the sample of respondents and their current lifestyle for comparison with the theoretical awareness of the importance of nutrition. Nutritional recommendations for clients with alcoholic liver disease

Work is in its theoretical part focuses on the description of the traditional role of alcohol in the Czech population and its consumption. Czech Republic has long been the largest consumers of beer in the world, as well as the total consumption of pure alcohol per person to hold among the highest in the world. With high levels of alcohol consumption is related of course the risk of addiction. Although alcohol affects the whole body, from somatic damage is focused mainly on the liver. Due consumption may develop a wide range of illnesses, from mild forms such as hepatic steatosis to serious, life-threatening liver cirrhosis. Therapeutic procedures in alcohol liver disease are outlined at the end of the theoretical part. The cornerstone of treatment is abstinence, followed by other recommendations, which include stop smoking, or sufficient nutrition support. The practical part is focused on diet recommendations, which are designed for clients with alcohol liver disease. Specific recommendations are based on analysis of articles that were retrieved based on the specified criteria. It has been found that antioxidants have no significant impact on the treatment of these diseases. Lipid intake should ideally be around 30% of total daily energy intake. Boarding of preschool children in school canteen

The bachelor's thesis focuses on eating preschool children in the school canteen. It is divided into two parts, theoretical and practical. The introduction of the theoretical part describes the history of school meals. The main part consists of a description of the basic components of food and nutritional recommendations for given age categories. At the end the legislation on school meals is mentioned. The practical part is focused on the rating the menu with regard to the variety, use and processing of raw materials. Another criterion is the filling of the consumer basket in accordance with Decree No. 107/2005 Coll. Part of the evaluation is also a proposal to modify the menu. The materials for the evaluation are obtained from the responsible persons of the school canteens for a period of two consecutive months. The operations are represented in the number of three municipal canteens and three communal.
Offer and composition of meals for children in nursery schools.

This Bachelor's thesis focuses on nutrition of children in preschools. Here, children eat a mid-morning snack, lunch and an afternoon snack. This equals to 60% of their daily intake. Healthy development of children requires the food compliant with nutrition standards for preschool children. Hence, the Consumption Basket was introduced by the Decree No. 107/2005 Coll., on school meals. To facilitate menu creation, nutrient recommendations with frequency of meals were issued by the Ministry of Health. Submitted thesis pursues three objectives: To analyse whether the consumption basket of selected preschools meets requirements defined by the decree, to focus on the level of adherence of preschools to recommendations defined by the Ministry of Health and to reveal whether the energy value of randomly chosen four-day menus and their content of individual nutrients meet the needs of a child from a particular age group. The practical part processes four-week period's menus to observe whether the school canteen follows recommended frequency of meals. It also analyses resultant consumption baskets of selected canteens to reveal whether they follow the consumption basket content. And finally, it uses recipes and foodstuff types obtained from four randomly selected days of a particular month. Obtained data were processed in a Nutriservis program to learn whether the energy value of the menus and content of individual nutrients meet the needs of a preschool child. Results showed that two of the canteens did not meet the consumption basket criteria. They also showed the level of adherence of school canteens to the nutrient recommendations and defined room for improvement. Regarding capability of meals in preschools to meet the needs of preschool children, nutrient intake was revealed to be higher - sometimes even higher than overall daily intake. However, it is necessary to note that neither the exact amount of served food was considered nor the amount of leftovers was subtracted.
Kindergartens catering with focus on preschool age children

The diploma thesis "Kindergartens catering with focus on preschool age children" is focused on the catering services of the facility. The thesis is divided into a theoretical part which included the development of the child, the dietary requirements of the organism at certain periods of life and, last but not least, the institution for upbringing and education of preschool age children-kindergartens. The practical part of the thesis is devoted to the research in selected kindergartens. Institutions are selected to transcribe catering in the capital city, town and village. In the comparison of kindergartens, one kindergarten is selected in the particular location, where a survey was carried out. The result of the survey is the filling of the consumer basket in selected kindergartens, which corresponds to decree no. 107/2005.
