The publication describes the activities of the Food Research Institute Prague in 2012. This activity is mainly focused on improving the level of the population's diet and on improving the supply of food, on improving the processes of food processing, on the development of special foods for groups of people with extraordinary health food demands, on the search and development of related control and evaluation methods , analytics including the performance of specific analyzes, and the development and manufacture of special measuring equipment and techniques. Data on the structure and organs of the institution, basic statistical data, results of the main (research) activities of the institute and other activities (pedagogical, educational, advisory activities, representation in national bodies, boards and commissions, international activities). The publication is bilingual (cz + en).

This bachelors thesis, named Packaging materials and packaging technique used in the food industry is dedicated to the most commonly used packaging materials, their properties and use. It also deals with packaging technologies, that are used in food industry, as well as machines which are related to this problem. Thesis focuses on the individual packaging materials, their composition, manufacture, both positive and negative qualities. The next section gives a detailed description of the techniques used for packing food, for which foods are the techniques appropriate and which packing materials are used with them. In the last part of thesis are shown the legislative requirements associated with the issue of packaging materials.
Business Plan - Founding of a Manufacturing Company

The subject of this diploma thesis is the business plan for the establishment of a manufacturing company. The company will operate mainly in the food industry. Thesis is divided into three parts, namely theoretical, analytical and practical. The theoretical part describes the theoretical data related to the preparation of the business plan, the analytical part is dedicated to analysis of the state and practical part contains own suggestions in several variants.
New Technologies in Tourism

New technologies are part of our lives. Therefore, every entrepreneur who wants to be successful, should use them. The main aim of this thesis is to assess current trends, modern tools and technologies used in tourism, focusing on 3D printing and to develop general recommendation for Czech companies. At first, this work deals with the principle of tourism. It also describes current technologies such as reservation systems, mobile applications and especially the 3D printing. This type of printer is used in many fields. The practical part focuses on a number of case studies related to 3D printers in the food industry. The knowledge gained from these studies are used to create a business plan. The plan includes the product 3D printers in confectionery, comparing 3D printers, financial plan and other recommendations. The result of this plan is used as a recommendation for confectioneries, which are interested in innovation of their business.
Influence of some foods on growth and viability of probotic bacteria

The goal of this work was a study the influence of food and beverages on the viability and growth of probiotic bacteria. The influence of food and beverages was tested on monocultures of Lactobacillus acidophilus, Bifidobacterium breve and mixed culture of probiotic microorganisms. In the experimental part, probiotic cultures were incubated in selected foods and beverages. After that they were tested in a model conditions of digestive tract. In some probiotic cultures, growth of viable cells during incubation in the digestive tract was observed. The increase of probiotic cells was showed predominantly in foods that contained higher levels of sugars and fats or a suitable combination. Their increase was up to four times in some cases. Based on the results, mixed probiotic cultures aren’t surprisingly exhibited better survival and maintain sufficient amount of viable cells even during the digestive process. Moreover, probiotic microorganisms could be recommended to consumption during meals better than just with a beverage.
Establishing a Marketing fund in the Czech Republic to support the agricultural and food sector

The thesis deals in its theoretical part of the Czech food market - their promotions and opportunities for improvement in the context of establishing the Marketing fund with the insipration taken from the Austrian and German models. It shows some of the proven mechanisms of applied Wine Fund of the Czech Republic. A separate chapter is devoted to the Federation of the Food and Drink Industries of the Czech Republic, which its 20 years of history inseparable part of the food market and one of the main promoters of establishing a Marketing fund in the Czech Republic. Other chapters are devoted to the Austrian model of Marketing fund (Agramarkt austriacus AMA) which works flawlessly since Austria's entry to the European Union and analysis of implementation of the Fund in the Czech environment.
Investment activity and capital productivity in small and medium en-terprises

This master thesis deals with an investment activity and capital productivity at individual groups of enterprises. The main goal of this thesis is to evaluate the realitonship between investment activity and capital productivity in the sector of food production. This thesis is devided into theoretical and practical part. The theoretical part defines main terminology and describes links in the field of investment activity and productivity. The practical part is based on data from Albertina database which was sorted into the same sized companies and food production was researched. At these groups of comapanies development and structure of tangible assets were analyzed as well as capital productivity and capital labor ratio. The last part dicscusses connections between previous investment value and capital productivity. This realationship is analyzed by regression analysis at software Statistica.
Preparation and testing of application forms for natural antimicrobial substances

The goal of this bachelor thesis was the study of antimicrobial and antioxidant effects of some herbal extracts: cloves, nettle, sage, chamomile, rosemary, elderberry, lavender and also lysozyme. Further, herbal extracts effect on Gram positive and Gram negative bacteria were compared. In the theoretical part were briefly characterized lysozyme, polyphenols, flavonoids and selected strains of microorganisms. In the experimental section characterization of herbs with antimicrobial and antioxidant effect was proved. Particles containing herbal extracts were prepared and encapsulation efficiency was determined. In some of tested herbs encapsulation efficiency of up to 80% was reached. Stability of the prepared liposomes was tested in the model digestive conditions and after 1 week and 1 month incubation period in model foods. Antimicrobial activity was tested on selected representatives of Gram negative and Gram positive bacteria. Gram positive bacteria were more sensitive to herbal extracts and liposomes containing encapsulated herbs, while lysozyme exhibited higher effect to Gram negative bacteria. Prepared particles with encapsulated antimicrobial extracts are especially suitable for use in the food industry.
Evaluation and strategy recommendation of financial management of the company MARLENKA international s.r.o.

The aim of this bachelor thesis is a complex evaluation of financial management and financial health of the company MARLENKA international s.r.o. in years 2008-2014. This company mainly produces cakes and delicacies made from honey. The first part of the bachelor thesis is devoted to theoretical aspect. There a variety of techniques and methods that are used for financial analysis will be outlined. The second part focuses on the practical application of these methods to the available financial statements and annual reports. This part first looks at absolute indicators which will follow up with ratios indicators. In the ratios analysis the comparison between Marlenka and food industry will be included. The third part of the bachelor thesis focuses on the final evaluation of the financial management of the company Marlenka and specific recommendations of a outside observer, leading to the improvement of the financial situation.
