Glutathion je důležitá složka hroznů, moštu a vína. Zvláštní důraz je kladen na jeho výskyt v hroznech, moštu a víně, na jeho funkci jako antioxidantu. Účinek na různé aromatické sloučeniny je také popsán. Objevují se informace o pozitivním účinku použití přípravku obohacených glutathionem ve vinařském průmyslu. Je ohodnocena jeho účinnost v kombinaci s kyselinou askorbovou proti vzniku oxidačního zbarvení. Glutathione is an important constituent of grape, must, and wine. Special emphasis is given to its occurrence in grapes, must, and wine; its role as an antioxidant in wine. The effect of glutathione on aroma compounds is also outlined. There are information on the positive effects of the use of glutathione-enriched preparations in wine industry. It is evaluated its effectiveness in combination with ascorbic acid against oxidative color formation.
