Řeháková, Jarmila ; Váchová, Alena (advisor) ; Hanušová, Jaroslava (referee)
This work is focused on the point of the secondary school youth attitude on the issue of the rational nutrition. Using the questionnaire investigation that is divided into several research areas I am trying to prove or disconfirm the existence of the mutual relationship between the branch of study and the preferences of healthy nutrition and healthy lifestyle for youth. My thesis deals with the question of a provable relationship in knowledge achieved in the field of healthy nutrition and healthy lifestyle and the branch of study. The main findings revealed the unsatisfactory knowledge in matters of healthy nutrition and a healthy lifestyle. Fruit, vegetables and dairy products are consumed by secondary school students in small amounts and irregularly. Only quite exceptionally they attend school dining-room to get warm and energetically efficient and biologically balanced lunch. Adolescents awareness on the principles of rational nutrition
BÜRGEROVÁ, Kateřina
Adolescence or maturing is a period between puberty and early adulthood. This period is very problematic, since there appears increasingly risky behaviour. Among others, risky behaviour includes incorrect nutrition or eating disorders. However, incorrect nutrition can have a very negative impact on the health of adolescents. In order to eat properly, they need however sufficient knowledge about rational nutrition. The aim of this thesis is to find out how aware adolescents are of the principles of rational nutrition. The thesis is divided into theoretical and practical part. The theoretical part describes the current state of knowledge of period of adolescence issues and rational nutrition. For the practical part, qualitative research method was chosen. The following four research questions were set for the research: RQ 1: How aware are adolescents of the principles of rational nutrition? RQ 2: Where do adolescents gain information about principles of healthy nutrition most often? RQ 3: Is the diet of adolescents aligned with nutritional recommendations for this life period? RQ 4: How aware are adolescents about eating disorders? The data were collected through semi-structured interviews, 17 adolescents aged fifteen to eighteen from the Pilsen Region participated in the interviews. They were chosen by snowball technique. The results of the research show that interviewees have good knowledge of the principles of rational nutrition, even though they do not know the term rational nutrition itself. Unfortunately, according to the findings, information seems not to be enough to make teenagers eat entirely rationally. For example, in terms of fruit and vegetable intake, their claims were consistent with the principles of rational nutrition, but they still consume less than the recommended amount for their age.

Food use of cannabis seeds and its importance in the rational human nutrition
OSINKOVÁ, Radka
Cannabis Sativa L. has been widely used since time immemorial in various areas, from medicine, textile industry and paper production to manufacturing of ropes or bowstrings. Thanks to its adaptability and wide usage, it has gradually spread all over the world. In the past, hempseed was a common part of the menu, mainly for the poorer population. This work addresses the potential for using hempseed in food industry, predominantly for prevention of various types of maladies, from inflammations or skin problems to diseases of affluence such as cardiovascular illnesses or cancer. Amongst the main beneficial ingredients in these one-seed pods we find, in dependence on the conditions in which they are grown and on the differences in varieties, approximately 25 % protein, 28 % carbohydrates, 6 % minerals a 35 % high-quality oil. There is a good content of vitamins E, C, B1, B2, B3 a B6 and minerals phosphorus, potassium, magnesium, sulphur, calcium, iron and zinc as well as proteins globulin edestin (65 %) and albumin (33 %), which contain nutritionally significant amounts of all essential amino acids indispensable for human health. Hempseed has plant oil of the highest quality containing 80 % unsaturated fatty acids and only about 10 % saturated fatty acids. The fatty acids n-6:n-3, gama-linoleic (50 70 %) and afla-linolenic (15:25 %) represent the ideal-for-humanorganism ratio 3:1 and increase its nutritional value. The seeds are also a good source of n-6 unsaturated fatty acid linolenic (1 - 6 %), which can be helpful for treatment of multiple sclerosis or the ADHD syndrome. The variety of hemp seed product has been steadily increasing with oils, flours, muesli bars, chocolate bars, pasta, or hemp-seed drinks serving as examples.

The practical part of this study used quantitative research technique in form of a questionnaire with aim to collect data regarding nourishment frequency in children. The researcher questioned a sample of 20 children that were divided into two equal samples. The first sample included 10 children with optimal weight according to the Body Mass Index (BMI) calculation and the second sample included 10 children with obesity issues that was also determined by the Body Mass Index (BMI) calculation. After data analysis the researcher determined that the main issues in children's obesity are irregular eating habits. Another factor that has significant influence on children's obesity was lack of physical exercise, where children prefer to spend their free time passively. Significant role plays also a fast food and soft drink consumption by children on a regular basis.
