Formování trhu v rámci komoditní vertikály vepřového masa v České republice a Rusku

The bachelor thesis is devoted to the issue of pork production within the commodity vertical and the formation of the pork market in the Czech Republic and Russia. At the beginning of the literature review of this bachelor thesis, the definition of agribusiness and its basic sectors are presented. Then, the bachelor thesis provides basic information about the market as such, describes the agrarian market and its essential characteristics. A substantial part of the thesis is devoted to the structure of the pork commodity vertical, the given section describes the important points affecting the commodity vertical and its level. In the next part of the Bachelor's thesis the main and important indicators of the commodity vertical of pork in both the Czech Republic and Russia are elaborated and presented, which directly characterize the level of development of the pork market in the two countries in order to subsequently compare the situations.
Qualitative indicators of pigs meat from pigs feeded algae suspension Chlorella

The aim of the study is to analyze and evaluate selected quality indicators of pork meat from pigs whose feed ration contained a suspension of algae Chlorella. The results of the experimental group are compared with the control group of pork samples. The near infrared spectroscopy (NIRS) method is used for the analysis in this study.

The focus of this bachelor´s thesis is the analysis of pig farming and it´s market in the Czech Republic in the recent years. The thesis examines topics related to the pro-ductions of pigs for slaughter. The history of pig farming, it´s significance, and the current situation in the Czech Republic are addressed. Furthermore, it is focused on the economic aspect, discussing the monetization, price development and foreign markets. Lastly, the thesis includes a subsidy policy.
Trends and Patterns of Meat Consumption in The European Union

The goal of this thesis is to research the consumption of meat in the European Union and to look for trends and patterns regarding the consumption. We will take advantage of the panel data structure and use our own balanced panel data set to properly verify and quantify the relationship of macroeconomic, and country specific variables with annual meat consumption per capita. We used data covering the consumption of meat in the European Union member countries in the year of 2018, with data ranging from 2000 to 2018. All data in our thesis are annual and aggregated at the level of single European Union member countries. We used standard panel data analysis tools to reach statistically significant results to recognize and estimate the important determinants of meat consumption in the European Union

We used data covering the consumption of meat in the European Union member countries in the year of 2018, with data ranging from 2000 to 2018. All data in our thesis are annual and aggregated at the level of single European Union member countries. We used standard panel data analysis tools to reach statistically significant results and concluded that individual propensity to consume meat varies between countries of the European Union and found evidence suggesting that urbanization and labour force participation impact meat consumption significantly.

The thesis is focused on the nature of market environment of selected commodity – pork meat, especially on the impact on developmental trends in the Czech Republic. It describes the development on domestic market with pork meat as well as the development on foreign market of European Union countries, in terms of demand and supply. The thesis is focused also on price formation in pork meat commodity vertical and competitiveness of Czech producers of pork meat on common market. The thesis analyses the business sphere and market concentration of meat-processing plants and slaughterhouses in the Czech Republic, when it refers to the largest domestic market players. The conclusion of the thesis is devoted to the analysis of price transmission in terms of the position of agricultural primary producers, industrial processors and final chains on the Czech market based on monthly prices of pork roast with bone and boneless pork leg.

This diploma thesis deals with methods of packaging influenced the microbiological contamination of meat. The relation among develompment of microbiological contamination and color of meat, according on time of storage and methods of packaging. The first part deals with quality of the meat,chemical composition of meat and post mort changes, when muscles are changed to meat, which we can proces and consume. The main part of the thesis pays methods of packaging and microbiological contamination of meat. The last section describes main bacterias which can cause alimentary diseases. Part of this work is experimental determination of the major groups of microorganisms which can significally affect the quality of the meat. A comparison was made between aerobically refrigerated meat and vakuum preserved meat between 1, 3, 7 and 11 days. As a sample was used pork and poultry. The color of meat was concurrently assessed at the same time by Konica Minolta CM-3500d device. The results were evaluated by CMs-100w Spectramagic NX, indicate values of CIE L*a*b*. The methods of packaging greatly influenced durability dependent on the development of contaminating microflora and color of meat.

Pokorná, I. Analysis of relative prices in the commodity vertical. Diploma thesis,Brno 2018. The diploma thesis focused on the formation of price levels in the commodity bverticals related to pigs breeding in the Czech Republic. The thesis focused on the quantitative review of the sensitivity of the price development on the consumer, processor and agricultura markets in the Czech Republic. Monthly prices of selected products are used for the analysis. The results based on analysis of price transmission, verify the occurrence and influence of market power in the commodity verticals. All the obtained outcomes were interpreted in the context of the real situation in the Czech Republic in the analysed period.

Animal products are part of almost every family worldwide. For food processing are important qualitative characteristics and requirements of food. Pork is currently the most consumed meat in Europe as well as in East Asia, more precisely in Vietnam. Food safety is increasingly developing, there are various organizations to protect the population from the dangers of food. Social media and communications are part of the food industry. In this work I also focus on legislative requirements and labeling of food animal origin in the Czech Republic as a representative of Europe and in Vietnam, which belongs to East Asia.
Vyhodnocení kvalitativních ukazatelů vepřového masa u sledovaných jatečných prasat

This thesis deals with the evaluation of qualitative indicators of pork in hybrid combinations (LW x L) x D and (LW x L) x PIC 337. Introduction of the thesis is focused on the importance of pig farming, the importance meat as food, its nutritional value and consumption of pork. A review of literature thesis describes the quality of the meat, the factors acting on it, carcass value and evaluation by the SEUROP system. To experiment was ranked boar breed Duroc and final boar PIC 337. The experiment was conducted in a commercial pig breeding ZOD Žichlínek on the farm Sázava, and evaluated indicators of carcass value and meat quality. Evaluation of the results showed that barrows have more growth ability than gilts. Gilts contrary showed better conformation and were placed in better grades.
