Comparison of aroma active compounds of selected types of cheese

This diploma thesis deals with the determination of aroma active substances in selected white mold cheeses, which are/are not awarded with the „Protected Designation of the European Union“ and their mutual comparison. In the theoretical part cheeses are characterised , including general production technology. The white mold cheeses are then described in detail. This is followed by the literary search dealing with the problematic of aroma active substances in cheeses. In conclusion of the theoretical part the method of their determination using solid phase microextraction and gas chromatography with mass detection is described. The SPME-GC- MS method was chosen for the experimental part of the determination of aroma active substances in selected white mold cheeses. A total of 12 cheeses were analyzed, of which 6 were Czech and Slovak and 6 were French with a protected designation of origin. The differences between individual samples were found in the number and type of the identified volatile compounds. A total of 78 volatiles were identified in selected cheeses, of which 20 were alcohols, 19 esters, 12 ketones, 11 acids, 4 sulfur compounds, 3 hydrocarbons, 3 lactones, 2 aldehydes, 2 phenols, 1 nitrogen compound. The cheeses were compared in terms of the identified compounds, and finally the results were statistically evaluated by the PCA method.
The possibilities of assessment of free fatty acids in food matrix

This bachelor´s thesis has a research character and deals with the possibilities of determination of fatty acids in foodstuffs, mainly focused on dairy products. It starts by overview of general characteristics of lipids and fatty acids. The crucial part of thesis represents summary of the methods, which can be used for determination of fatty acids. A special chapter is devoted to determination of free fatty acids. The isolation of lipids/fatty acids from sample matrix is necessary before the determination itself, classic solvent extraction in various applications or several new extraction techniques, e.g. solid phase extraction or supercritical fluid extraction, can be used for this purpose. After the separation of individual lipid fractions, for which the solid phase extraction and/or thin layer chromatography are usually used in practice, the transformation of fatty acids to derivatives, which are suitable for following analytical determination, is often necessary. Gas chromatography with the flame-ionization or mass selective detection is most often used for determination and therefore fatty acids are converted to substantially more volatile methyl esters. In some special cases high performance liquid chromatography and/or thin layer chromatography can be used.

Hlavní téma obou autorek představuje relativně uzavřený svět hlavní ženské postavy, do kterého vstupují další postavy, spoluutvářející charakter jejího světa. Hlavní hrdinka románu Pianistka Erika Kohut žije ve třiceti letech stále se svoji matkou, pro kterou je nejen dítětem, ale i partnerem, přítelkyní či pacientkou. Erika nesmí vést svůj vlastní život, ztratila svoji vnitřní svobodu i právo sama se rozhodovat. Postupem času ztrácí však i sílu klást matce odpor a poslouchá, ačkoliv duševně pomalu umírá. Každá minuta jejího život patří matce a ona ví, že jí nikdy nebude dovoleno tento nezdravě pevný a vzájemný vztah opustit. Tento neúnosný způsob života jí donutí vést tajný život, ve kterém zkouší sama žít, myslet, snít a toužit, kdy poznává nástrahy a strasti života v podobě konkurence jejích mladých a atraktivních studentek či kolegů na vídeňské konzervatoři, probouzí se v ní vášeň a ženskost ve vztahu k žákovi Klemmerovi, či navštěvuje peep-show na okraji Vídně, kde bez zájmu sleduje cizí ženy stejně jako milující se páry v okolí Prateru. Tento život patří výhradně jí.
Problems of unmarried mothers in Republic of Korea

This thesis analyses the standing of unwed mothers in the Republic of Korea during the period from establishment of the state to the present, with main focus on the present situation. It searches for the reasons behind the current situation by looking at the development of Korean woman's role, development of the Korean family form, changes in state's social structure and Korea's transition into its current modern state form. It also describes the means of governal and non-governal help to unwed mothers, as well as its effectivity.

Postavení a specifika německé ekonomiky v EU

Práce zabývá jednotlivými charakteristikami německé ekonomiky a politického systému, v další kapitole jsou rozebrány jednotlivé reformními kroky po roce 2000. Centrální část práce popisuje současnou německou ekonomiku, její ostavení v Evropské unii a komparaci s Francií a Velkou Británií. Na závěr jsou zmíněna specifika Německa, sociálně tržní hospodářství, jeho podstata a současná podoba. Dále je nastíněna problematika nových spolkových zemí, převážná část je věnována ekonomické situaci a trhu práce.
