Bachelor thesis is occupied with industrial hemp and possibilities of application hemp seeds and hemp flour in pastry production. Thesis characterized industrial hemp as a field crop, describe its plant and seed anatomy, including its chemical substances. Additionally, there are described options for utilization of biomass, especially utilization of hemp in the food industry. Experimental part of the thesis is focused on hemp pastry making. There are described and sensory evaluated products prepared according to individual recipes.

This dissertation thesis describes utilization of agricultural and food processing waste and intermediate materials for manufacturing of functional food and bio-materials. The aim of this study is to develop new procedures to process food and agricultural byproducts in order to create modern products and materials with higher added value. The focus here is especially on food supplements, nutraceuticals, bio-materials for health industry and pharmacology. Examples can be substances for drug delivery or substances for controlled release of active ingredients. Examples of such products are cyclodextrins, chitosan, chitin-glucan complex and glutathion.
Food quality and sales control system

The object of this thesis which deals with ?Food quality and sales control system? is to inform about the current legislative as regards the productin and business food chain. In the theoretical part the laws and bills of the Czech Republic are summarized that relate to meat and meat product production. Also the European legislative is elaborated here which needs to be followed by all Czech producers. Further on, the thesis deals with different quality regulation systems that are used to ensure safe food production. The practical part includes the veterinary control in the particular food store. There I focused on how the control of the meat and meat products quality is carried out. In all the production and processing sections it is important to prevent the contamination. In the whole production plant it is important to follow strict security and sanitary rules. The asset of the thesis has been the gain of theoretical and practical overview of the production plant activity including the control authorities.
