This work is focused on determination of total mercury content in smoked fish products by atomic absorption spectrometry. The theoretical part of the thesis deals with mercury, a description of the analyzed species of fish, laws and methods of mercury determination. The concentration of total mercury in smoked fish products was measured in practical part of this work. The samples were bought in stores in Czech Republic. Measuring of mercury contents in fish products (commonly available) was the aim of this work. Atomic absorption spectrometer AMA 254 was used for analysis. Most of the measured values did not exceed the limits imposed by law (Commission Regulation EU No. 420/2011), but the limit was exceeded in all samples of smoked marlin and tuna (Losica company) and in one sample of smoked tuna (Varmuža company).
