The diploma thesis dealt with influence of oenological tannins on white wines. Total influence on sensory character and composition of wine.The teoretic part dealt with antioxidant substances in wine and with oenological tannis and their division and use.The pratical part deals with research of adding of seven types of commercial tannins to wine. The practical part summarizes results of sensory analysis include aromatic profil of wines. The charts with results are showing results of measurement of antiradical aktivity, reducing ability and amount of total phenols and catechins.
Zrání vín v sudech barrique

The overarching aim of this thesis is to explore the topic of the use of barrique barrels in wine maturation, by means of a literature review. Barrique is a French term used for a particular type of a wooden barrel, which traditionally holds 225 l and which has the ability to improve and enhance the wine's organoleptic properties. There are several aspects that can influence the type and intensity of flavour extracted from the barrel during the maturation process. One of the aspects is the quality and type of wood the barrel is made from. This topic is discussed in the first chapter of this thesis. The second chapter looks at the history of barrel making and provides a description of the barrel manufacturing process. The third chapter sheds light on the changes in chemical composition of wine during barrel maturation. The last chapter is dedicated to the topic of cleaning and storing barrels.

The bachelor´s thesis entitled: The stabilization and maturation of red coloured wine deals with the making of red wine and substances which are contained in it (anthocyanins and tannins). The thesis deals about the chemical structure of a grape, technology of red wine making and the stabilization of red coloued wine. Thesis also examines the processes of a maturation of red wine.
