Dietary salt intake in preschool-aged children Abstract This work is devoted to the intake of table salt in preschool children. Although salt has an irreplaceable role in the human organism, the human population is currently struggling with its excess in diet, which can lead to complications in patiens with arterial hypertension or other chronic diseases. Since the habit to salty taste is learned, it is advisable to reduce salt intake from childhood. The aim of this work was to find out how much table salt is taken by children of preschool age and what foods are its main source. The research involved 3 kindergartens, whose main cooks wrote down the amount of salt used in cooking for 10 days, another source of information about salt in food was menus and stock picking lists from which it was possible to find out how much salt did children in kindergarten take. The second research subject was 10 children whose parents wrote down exact amount of food and salt added to meals for 1 week. Subsequently, the results were entered into graphs and evaluated.The research shows that children consume almost 3 times more salt at home than in the case of all-day meals in kindergarten. Nutrition of children with special dietary needs at kindergarten

The theoretical part of the bachelor thesis contains chapters on elementary information and diets in food allergies and diseases connected to special diets - celiac disease, lactose intolerance, diabetes. In addition, information on Nutrition of children preschool children at kindergartens. The methodical part deals with special nutrition at kindergartens to children who need it for health reasons. The research was carried out using a quantitative method, using a questionnaire. Directors of kindergartens responded to questions about the scope of providing a special (dietary) nutriment for children with special dietary needs.
The issue of the application of the principles of good nutrition in school canteens

The aim of the diploma thesis was to increase the consumption of vegetables in the nursery schools in Volary and to propose subsequently modifications and recommendations. Information about the principles of appropriate children nutrition, nutritional requirements and standards applied in school feeding with respect to relevant age of children are presented in the theoretical part. An analysis of the consumer's basket content for MŠ Volary in year 2017 was performed in the methodology part. Found data were compared with the data covering the same period from other schools. Comparison shows that consumption of vegetables can be increased, although MŠ Volary complies with the consumer's basket regulation according to a valid ordinance (Ordinance 107/2005 Sb.). Precautions leading to the increase of vegetables consumption took action for menus in MŠ Volary. Changes related mostly to the implementation of new meals containing vegetables, the increase of vegetables portion in traditional meals, and the improvement of vegetables food look. The modified menus were tested on a sample group of consumers for three months. The sample group of MŠ Volary II Sídliště was chosen for changes observation. The sample group consisted of 45 children (23 girls, 22 boys) of pre-school age that means 3 6 years old. The children body height and weight complied with recommended parameters of relevant age and gender. Consumers' reactions to changes were observed. Experimental data were evaluated graphically. Further, the comparison of consumer's baskets of MŠ Volary in periods year 2017 and January March 2018 was performed. The former covers the period before and the latter the period after the implementation of changes, respectively. When compared, the evident increase of vegetables (21 % in MŠ I and 23 % in MŠ II) and portion in consumer's basket was found.
