Comparison of selected qualitative indicators of heat-treated meat products from various distribution networks
TESAŘOVÁ, Ivana
Meat products belong into a popular group of foodstuffs intended for human consumption. Upon cancellation of state standards after 1992 it was possible to register an increase in distribution of products into shopping networks under the same name but with different ingredients. An analysis of the content of basic ingredients and of the sensory quality was carried out on selected samples of heat-treated meat products (20 products, 17 producers) bought in various types of shops. The contents of basic ingredients (water, fat, salt, proteins, collagen) were measured in a laboratory with the help of the NIRFLEX N 500 instrument, and no results of measurement at the level of conclusiveness (p < 0.05) were statistically evidenced. The best evaluation was granted by the assessors (6 persons) to the sample of the "Junior" group from producer "Fleischwaren Berger" from the Billa supermarket, while the worst evaluation belonged to the sample of the "Chicken Junior" group from producer "Schneider Masokombinát Plzeň" from the Albert supermarket.

The practical part deals with the quality of service provided, its basic assumptions and differences in the quality of services based on business processes by using a process model. The main objective is to propose a new efficient process model.

This bachelor thesis is dealing with meat and substitutes in meat products. First and second chapter are dedicated to definition of meat and meat products, its standards, where the priory is safety of food. The third chapter is dedicated to substitutes of vegetable and animal origin, which are used mainly from an economic prespective. From vegetable substitutes dominate starch, roughage, soybean protein and cereal protein. And from animal protein are milk proteins, egg, blood, collagen and unpopular mechanically separated meat. Mainly poutrly mechanically separated meat, which can be found in many poultry products. In last chapters are introduced products which according to legislation are allowed to contain certain substitutes (milled products) or are not allowed to contain any substitutes (ham of the highest quality and ham of the selective quality).

The main purpose of this thesis was to investigate the possibility of the birch biomass usability. Based on the literature and consultation, the list of products from various parts of the birch tree was prepared. There were also described the products that can be obtained from the individual wood classes. The product overview, made according to the individual birch tree parts, is involved in this thesis as well. For the last 6 years the increasing price of the third class quality wood has been observed.

This bachelor thesis is focused on characteristics of factors that influence quality of beef. On the fist part of literary section there are defined terms like meat quality and beef, followed basic characteristics of the beef consumption development in the Czech Republic and the factors affecting it. In the middle part there are described intravital influences. In the first place there are included genetic effects, such as breed and sexes, breeding and following circumstances of pre-slaughter manipulation. This part ends by describtion of slaughter effect. Than are untroduced post-mortem effects include carcass processing and cold storage preservation. Subsequently are described post-mortem changes in meat complemented by possibility and consequences of their abnormal course. At the end there are included chapters about cutting and freezer storage of meat.

This thesis is called "Management of project activities in the enterprises of light industry" and deals with the analysis of the management of project activities, including procurement assessment made objects in terms of quantity and quality, time and cost. The theoretical part is included research issues relating to the manufacture, production processes and their associated characteristics. The practical part describes the characteristics of a social organization, the analysis of manufacturing processes aimed at product realization, production planning, resource management, preparation and production management and quality policy, including an analysis of the produced object. On the basis of these analyzes were set out proposals for a more effective management of the company and improve the functioning of the company in the long run.
