Skladba gastronomického odpadu ve vybraných provozovnách Jihomoravského kraje

The aim of the work is to obtain data from selected establishments in the South Moravian Region and to evaluate the obtained data. In the theoretical part, the legislation concerning the collection and processing of gastronomic waste is researched. Furthermore, the collection procedures and the containers into which the waste is placed, as well as the collection and the technology used for this type of waste are presented. The last point is the treatment of catering waste either aerobically or anaerobically - that is, composting or in biogas plants. The individual types of treatment are described in terms of the process, the influencing factors and the occurrence in the Czech Republic. The practical part contains data obtained in selected plants in the South Moravian Region. These data were obtained by weighing the waste for three months during the preparation and consumption of food. The observed data were evaluated and compared with each other with subsequent discussion in the establishments where the waste goes next.

My thesis aims to describe and evaluate the composition of gastronomic, biodegradable waste in selected plants or households in the Brno agglomeration and assess the potential to use it to produce biogas. In the theoretical part of the thesis I deal with the legislative aspect of gastrowaste handling. Here I also describe the entire process of gastrowaste disposal and collection, as well as options how to use it to generate energy, and finally, I am slightly touching the obligations of the operator. In the practical part I summarize the analysis of the waste produced in both gastro operations and households, which was weighed and checked for the period of consequent seven weeks. In conclusion, based on the information acquired, I carried out an assessment of theoretical possibilities how to use the gastrowaste as the basis to produce biogas in biogas plants.

The theoretical part contains an analysis of the area of gastronomic waste in two countries with different ethnographic, socioeconomic and legislative parameters. The thesis identifies positive and negative aspects, advantages and disadvantages in the processing of this type of waste in both states, i.e. in the Czech Republic and the Russian Federation. Finally, the thesis shows some alternative possibilities of using this type of waste and explains the process of bio gas manufacturing, as one of the most efficient ways of disposal.

This thesis goal is to analyze and describe the gastronomical waste composition in chosen South Moravian service establishments and evaluate its potential for future usage in biogas production. This bachelor thesis is separated to two parts. The first one is theoretical, you can find there information about law, which contains law regulation for gastronomical waste and gastronomical businesses. Also you can find here basic info about gastronomical waste quality evaluation types and possibilities of its usage for biogas production. The second part contains results of own observation in three restau-rants in Brno, which are not separating gastronomical waste as a daily practice. All owners wanted to stay in anonymity. Due it this thesis does not contain names of restau-rants or cafés. This is followed by evaluation of theoretical amount of biogas, which could be generated by its usage in biogas stations.

The thesis is focused on gastronomic waste produced by households as a part of municipal waste. The thesis comprises theoretical overview of the structure and management of municipal waste and description of the current situation in the world and in Europe in terms of food waste production. A questionnaire survey was conducted in selected states of the European Union - in the Czech Republic, the Republic of Slovenia and the Slovak Republic. The respondents answered questions on the structure, amount and way of disposal of the food waste that was produced in their households and also, expressed their opinions on processing the food waste in biogas plants.
