The thesis on the topic: Production and comparison of fruit puree was accomplished at the Department of Post-Harvest Technology of Horticultural Products at the- Faculty of Horticulture at the Mendel University in Brno in years 2016/2017. The goal of this thesis was design and prepare several variations of fruit purees and compare with products from the retail network. Thesis deals about technology production of fruit purres and baby food, requirements for composition and labeling of these products. In the experimental part, the thesis deals with the comparison of the fruit purees produced and purchased according to the specified quality parameters and the sensory evaluation.

Bachelor thesis on the theme storage of thermophilic stone fruits contains theoretical and practical part. Theoretical part include history and botanical description of peaches, nectarines and apricots. It also include description of nutrition composition, harvesting, sorting and storaging of stone fruits. Practical part was focused on influence of storage conditions on chosen species of the stone fruit. For evaluation were selected cultivars Andross and Carson. Evaluated were following parameters: fruit size and shape index, weight of the fruit and ston and their percentual proportion, content of titrable acids, soluble solids content and fruit firmness. Results were evaluated and presented in tables and graphs.
Expected impact of climate change and their relationship to distribution, growth and development of thermophilic fruit trees in the Czech Republic

The main objective of the Master's thesis is to collect and evaluate scientific information and processing datasets of expected impact of climate change and their relationship to distribution, growth and development of thermophilic fruit trees in the Czech Republic. The first and second parts of the literature research are focused on the impact of global warning and economic/agricultural conditions on growth and development of the thermophilic species of fruit trees at the global, regional and local levels. The next section deals with the relationship of thermophilic fruit trees production with climatic, soil conditions, phenology and economic factors, which greatly affect yields in the Czech Republic. This study was conducted on daily meteorological variables (sum of global radiation, maximum and minimum temperatures) and annual yield datasets of Apricot (Armeniaca vulgaris) and Peach (Prunus Persica) trees at the country level for the period 2005-2015. The obtained new results can be divided into 3 parts: (1) catalogue of meteorological phenomena during the growing season, (2) catalogue of meteorological phenomena during the period of dormancy, and (3) statistical analyses of meteorological extreme events during flower/flowering formation of the Apricot and Peach trees. Results based on the analysis of historical phenological observations and descriptive statistics of yield parameters of thermophilic fruit trees over the study period shown that (i) mainly spring phenological stages of the thermophilic fruit trees shown a tendency to an earlier onset, (ii) the highest variability in the phenophase onsets of Apricot and Peach are in the inflorescence emergence and beginning of flowering, (iii) the coefficients of variation were higher for Peach with year-to-year variations in crop yields, and (iv) Peach had the largest fluctuations in average annual production (from 0.48 to of 0.72 tha-1 year-1).

The aim of the thesis on the Effect of 1-MCP on the extension of the shelf-life of peach and plum fruits was to determine the effect of 1-MCP on the peach fruits of the 'Redhaven' variety and plum fruits of the 'TOP' variety. The practical part consisted of harvesting the fruits of harvest maturity, an analysis of quality parameters (weight, firmness, sensory evaluation, titratable acid, soluble solids, ethylene production, respiration), 1-MCP treatment and storage at 2 °C and 20°C. After 7 and 14 days (10 days in the case of peaches stored at 20 °C) the quality parameters of all fruits were determined. Using the measured values, the effect of 1-MCP on various parameters influencing the prolongation of life was considered for treated and control fruits. The theoretical part dealt with different fruit species and varieties, material components important for fruit ripening, ethylene, 1-MCP and storage of fruit.

They were evaluated for the degree of maturity of three varieties of peaches. They were select varieties of peach Royal glory, Redhaven, and Flamingo. Fruits were collected at three intervals and in an immature stage, perfectly ripe and overripe in the period from 10.7. to 1.9. 2014 in orchard Horticultural faculty, in Lednice. Ripening peaches on the tree took place spontaneously. At the plant material was determined by the weight, the proportion of the wallop and pulp, firmness fruit, content titratable acidic, soluble solids content and sensory evaluation was carried out. Subsequently, was performed correlation analysis of measured parameters.
Pomological evaluation of peach and nectarine varieties promising from commercial growing point of view

According FAO data, peach production in Czech Republic has been very low, for the past two decades averages production has been around 2000 tonnes; whilst consumption for the same period keeps growing; like in the case of most fruit. To be able to bridge the gap between production and consumption, and of course to also increase the income of the local producers, this research was carried out to evaluate some selected peach and nectarine cultivars on the Experimental Orchard (Lednice, south Moravia, Czech republic) of the Faculty of Horticulture of The Mendel University, in 2013, to select and recommend cultivars that will suit and boost productivity of the local growers in Czech Republic. 36 cultivars and 24 parameters were evaluated. Traits and parameters for evaluation were chosen according to the Peach Descriptors for Variability (Nitransky, Holubec, 1992). Evaluations, was done with 3fruits randomly selected from each cultivar. Statistical analysis was done with the software Statistica 12 with Tukey HSD test. 8 cultivars were recommended at the end of the experiment.
