Analysis of VOC Frankovka wines originating in the Modré hory region

This diploma thesis deals with the chemical characterization of Frankovka red wines and the possibility of using chemical analysis of wines to distinguish Frankovka wines from VOC Modré hory from other Frankovka wines from the Moravian wine region. The theoretical part describes viticulture in the Czech Republic, the characteristics of the Frankovka variety and the wine classification system in the Czech Republic. The next part describes in detail the association VOC Modré hory, the red wine technology and the use of chemometry for wine authentication. The experimental part deals with the determination of the elemental profile of wines by ICP-MS and ICP-OES methods, analysis of selected phenolic substances by HPLC-MS and analysis of organic acids by IC. Furthermore, the analysis of the aromatic profile of wines was performed using the technique HS-SPME-GC-MS and the total content of phenolic substances in wines was determined by the MAS method. A total of 24 wine samples were analyzed, where 12 samples came from VOC Modré hory and another 12 wines came from other Moravian wine regions. Statistical analysis techniques (Mann-Whitney U-test and PCA) were used to classify wine samples into groups in order to separate wines from VOC Modré hory and other wines from other Moravian regions. The results of this work showed that with the help of chemical analyzes and statistical techniques it was possible to distinguish wines from VOC Modré hory from other wines from the Moravian wine region.

This diploma thesis deals with the topic of COVID-19 pandemic and its impact on wine producers of the VOC Modré Hory association. First, the czech wine market is specified. Characaterization of microregion Modré Hory and the local VOC association is mentioned afterwards. Later on COVID-19 pandemic is discussed inclusive of the impact on the wine sector. For the purpose of qualitative research selected members of VOC Modré Hory association were asked to participate in a semi-structured interview. The association provided support for the wine producers by launching a collective promotion in the online environment. Global impact of COVID-19 pandemic on wine producers of VOC Modré Hory association is unclear and its extent is affected by the ability of respective wineries to adapt to this new situation. Measures were taken by each winery individually.

Možnosti vinifikace hroznů odrůdy Frankovka pro VOC Modré Hory

In the thesis entitled The possibilities of vinification of grapes of the variety Frankovka for VOC Blue Mountains, the primary objective was to evaluate the influence of autochthonous yeast on the commercial by fermentation in an automatic vinifier, an open and closed vessel. Next, find out by ripening the wines in a wooden barrel and an impervious container whether it suits more maturation with increased or minimal amount of oxygen. The result of this work was then the sensory analysis of the wine was quantified into a 100 point table according to the OIV as well as the aromatic profile and profile of the structure and strength of the wines, which were then processed into the graphs. Experimental samples were analyzed by individual parameters - anthocyanins, total polyphenols, antioxidant capacity and color parameters.

The bachelor thesis describes VOC Modré hory and characterification them. The aim of this work is more closely describe VOC Modré hory and to compare this association with other VOC. Beginning of this thesis describe appellation systems in other countries. Next chapter describes the terroir and their factors. Following chapter describes geological, soil and climatic conditions of mikroregion Modré hory. This thesis contain also conditions wine classification, description of varieties and members of the VOC Modré hory. This association has been compared with another VOC and has been proposed a solution for better customer orientation and highlighting terroir for wines labeled VOC.

The bachelor thesis is focused on the wine village Němčičky, its history, soil and climate conditions, vineyards, most commonly grown grape varieties and grapevine training. A brief description of the most important grape growers and wine producers in this region is included as well. It also looks at the current Czech wine legislation with regard to the allocation of grape growing regions and subregions in the Czech Republic approved for the production of predicate wines. The subject of this work also examines the characteristics of the VOC Modré hory association, the comparison of the appellation and German classification systems, and the meaning of the word terroir in connection with the unique attributes of the grapes' place of origin. The thesis concludes with a sensory and basic chemical analysis of selected samples of six typical wines for the wine village Němčičky.

Bachelor's thesis with topic "Charakteristika a specifika VOC Modré hory"deals with similarities of separate VOC in Czech Republic and also about specifis of those VOC. Based on the chartests of separate VOC associations research was made with aim to find specifics of VOC Modré Hory in the opposite to other VOC. Next aim was to propose possibilities of chartests improvment in VOC Modré hory to make customer clarity of offered wines better. This improvment was made by creating od two product lines for red wines and two product lines for rose wines. At the red wines there is VOC Modré hory Traditional line for easy drinking, fruity red wines and line VOC Modré hory
