The basic chemical parameters of berries from some black currant cultivars

This thesis deals with the chemical analysis of the juice from fruits of cultivated varieties of blackcurrant (Ribes nigrum L.) The theoretical part is dedicated to botanical characteristic of black currant including the origin and the extension. There are also mentioned the history of cultivation currant and breeding of the varieties of black currant. Chemical composition of currant is also described in this part. In the experimental part some basic chemical parameters (yield of juice, soluble dry matter content, dry matter general content, pH, titratable acidity, formol number and reducing saccharides content) of four black currant cultivars were determined.
Analysis of juices of selected blackcurrant varieties

The work deals with the chemical analysis of juices selected varieties of black currant (Ribes nigrum L.). The theoretical part is divided into three main chapters. In the first chapter there are short botanical characteristics of black currants, content of biologically active substances in fruit and utilization of black currant fruit in food industry. In the second chapter there are characteristics, importance and methods of determination of phenolic compounds. Vitamin C is describe in the last chapter, its characteristics, importance and methods of determination. Experimental part describes determination of three chemical characteristic of black currant fruits: content of total phenolic compounds, content of total anthocyanins and content of vitamin C. Twelve modern varieties of black currant were selected for determination. Based on these results, it is possible to deduce the more important varieties. The content of total phenolic compounds was in the range of 326,7–641,4 mg•100 g-1 in all samples. The content of total anthocyanins was analysed in the range from 102,5 to 284,5 mg•100 g-1 in all samples. And content of vitamin C was in the range from 82,0 to 379,1 mg•100 g-1 in all samples. The overall comparison of the varieties of black currant was found, the varieties Ceres, Ben Hope, Ben Lomond, Démon and Ometa are the most promising varieties in terms of the content of the above mentioned compounds.

In the experimental part was set tentative determination juice yield, soluble solids content, pH, titratable acidity and formol number. Based on the results were different varieties compared.
Lyophilized fruits - chemical properties and processing possibilities

This diploma thesis deals with chemical analysis of selected frozen, dried and lyophilized fruit, specifically Mirabelle de Nancy, Aronia Nero and blackcurrant varieties Gairn Ben and Ben Lomond. In the theoretical part taxonomy and botanical characteristics of selected fruit are given. Subsequently the utilization of fruit in food industry is described. In common the theoretical part focuses on lyophilisation and drying of fruit and raw food. Further in this part the methods of phenolic substances, anthocyanins, antioxidant capacity and finally ascorbic acid and carbohydrates value measurements are specified. In the experimental part the value were determined measurements of biologically active substances: total phenols, total anthocyanins, antioxidant capacity, ascorbic acid and carbohydrates. For all value measurements were compared the frozen, dried and lyophilised samples of every single fruit. Further, the every sort of fruit were compared to each other. Following the raw food preparaon a product of lyophilised fruit was made.

This dissertation is focused on the evaluation of the production and economic characteristics of the selected species of currant(s). The individual phenological phases, the size of the shrubs and health status of the planting were observed, yields from each shrubs and external and internal features of the fruit were described and properely registered. 11 species of black currants and 8 species of red currants were evaluated on the ground of the school farm in Žabčice during the growing season 2014. In the experimental part of the disertation, especially the contained substances such as vitamin C and dry matter were measured and evaluated. The measurements of the contain substances were performed in the laboratory of the Institute of Plant Breeding and Propagation (building A) of Mendel University in Brno. This experimental part focuses also on the evaluation of the yields from the individual shrubs, weight and size of the fruits. All the obtained data were statistically evaluated by the means of the statistical program Statistica 10. In the conclusion of this disertation there are recommended species suitable for cultivation and breeding in our climatic conditions.
