The bachelor thesis deals with the Production technology of meat products with "Traditional specialities guaranteed" indication. The first part deals with the definition and chemical composition of meat and also with a brief description of meat and meat products production and consumption. The next part deals with the meat production and also with raw materials for meat production as well as with basic operations of its production. The main part of the thesis pays attention to European protected designation. This scheme contains indications Protected Geographical Indication, Protected designation of Origin and Traditional specialities Guaranteed. In this main part, legislative regulations for using of the above-mentioned protective indications can be found. Since this thesis is focused on the meat products indicated as Traditional Specialities Guaranteed, this part also contains information about production technology of individual products carrying this indication, the requirements onto their quality and inspection methods by Inspection Body.
