Šulc, M. Developing a marketing strategy of launching a pasta with insect protein. Bachelor thesis. Brno: Mendel University, 2023. This bachelor's thesis focuses mainly on the specifics of marketing strategies for products containing insect protein. The first part of the thesis deals with literature related to the investigated issue. In the second part, a survey of the Czech market is carried out and then a marketing strategy is proposed, including the quantification of costs, for the entry of a new product containing insect protein into the market.

The thesis deals with the profile of fatty acids in the body of the larval stage of the Tenebrio molitor, and how the content of fatty acids in the body of this insect could be affected by the type of food which they consume. The theoretical part is devoted to legislation dealing with the issue of edible insects in the Czech Republic and the EU, a general anatomical description of the insect body, characteristics of representatives of approved edible insects including their nutritional aspects, advantages and disadvantages of insect consumption, industrial processing of insects and food neophobias. There are also included the general characteristics and distribution of fatty acids. The practical part is dedicated to the methodology of fattening own samples of larvae of Tenebrio molitor fed with basic feed enriched with vegetable oils and vitamin D, as well as the processes for determining the fatty acid profile in their bodies and evaluating the obtained results and discussion.

Eating edible insects is an activity that has recently become increasingly important. In order to use edible insects safely, it is necessary to carry out, among other things, an assessment of the risks associated with consumption. This work focused on the microbiological risk assessment of edible insects. The theoretical part of the thesis provides information on the nutritional properties of edible insects and the risks associated with insect consumption. It also mentions legislation related to the inclusion of insects in food. The thesis describes the impact of insects and their consumption on the environment and presents factors that need to be further addressed in the future. The thesis provides a list of important pathogenic microorganisms. In the practical part it is possible to find a statistical evaluation of the measured values of the pathogens present in the insects and in the feed. Total counts of microorganisms, Escherichia coli, Enterobacteriaceae, moulds, Staphylococcus aureus and lactic acid bacteria were determined. The results were compared with those of studies on similar topics.
Vliv způsobu zpracování larev potemníka brazilského na barevné a texturní vlastnosti produktu

The thesis dealt with the processing of Zophobas morio larvae fed on different feeds by freeze- drying alone and in combination with roasting, with subsequent evaluation of the basic production parameters. The highest increases in length (17.1%) and weight (17.4%) of the individual were detected in the larvae of the control group (K). The highest increase in total weight (42.8%) was observed in group 1 fed fermented wheat bran. Freeze drying caused a decrease in weight of more than 60% in all groups, the water content was reduced to below 1.3% in all groups. Subsequent roasting of larvae did not cause a significant decrease in weight. The most significant decrease in larval length (22.9 %) after freeze-drying was detected in group 1; roasting had no effect. Furthermore, the colour properties of the samples were analysed, and their strength was determined. None of the treatments observed resulted in the production of excessively dark larvae. The differences between the groups studied in the colour parameter a* and b* were not statistically significant. The highest strength of the freeze-dried larvae was observed in group 1, which was freeze-dried only (2.35 N), there was no significant change in strength due to roasting. The technological treatments of edible insects affected the texture and colour of the product. Their correct choice and execution are important for the final product and its perception by consumers.

This bachelor thesis deals with the use of edible insects material in the food industry. Around 2000 edible insect species have been recorded worldwide and are commonly consumed in Africa, Asia and Oceania. In recent years, edible insects have also become a major topic of discussion in the Western world. In the European Union, legislative steps have been taken to categorise certain species of the edible insects as food. On the European market, products made from the yellow mealworm, the house cricket, the migratory locust and the lesser mealworm can be found. These edible insects are a rich source of protein, fat, vitamins and minerals. It also contains the fibre chitin which is associated with lower digestibility of insect products and may also act as an allergen. Some nutritional substances may be subject to the development of innovative technologies. For example, proteins from the migratory anemone have the potential for the development of edible packaging or chitin fibre may be another alternative source to obtain chitosan.
Evaluation of environmental impacts of insect production for food purposes in conditions of the Czech republic by the LCA method

The thesis deals with the evaluation of environmental impacts of insect farming for food purposes in the Czech Republic. The topic is focused on the impact category of climate change, with emphasis on Global Warming Potential (GWP for short). Environmental impacts are assessed using the Life Cycle Assessment (LCA) method. This method is based on evaluating the impact that a product has on the environment over its lifetime. This has enabled the method to assess different potential types of impacts. LCA analysis is based on the principle of "cradle to gate". The approach is based from the sourcing of raw materials to the final output gate, represented in the form of a product. One kilogram of insect product is chosen as the pro-product. For the LCA analysis, a model farm of the mealybug (Tenebrio molitor) was established. Data for this work were collected from edible insect farmers in the Czech Republic who were sent a survey. Some data were obtained from the literature. In relation to the obtained data, a calculation of the environmental burden was made. In the thesis it was found that one kilogram of insect product generates a carbon footprint of 11.87 kg CO2-eqv.

Bachelor thesis consists of theoretical and practical part. The theoretical part of this work deals with the consumption of edible insects both in the world and in the Czech Republic. Furthermore, the advantages and disadvantages of the consumption of edible insects and their nutritional value are described. It also includes characteristics of the mealworm (Tenebrio molitor). An important part of the thesis is the practical part, whose aim was to determine the effect of different types of protein feed in the breeding of mealworms. Here their effects on the weight yield of insect slaughter material were compared. The experiment was carried out using four types of protein feed: plant protein (soy), animal protein (dehydrated eggs), complex feed (feed for aquarium fish) and mix of the above feed. Breeding took place in the months of October - December 2019. Two experimental generations of adult insects were bred for egg production. The subsequent egg separation produced separate generations of insects which were fed for fifty-two days. The experiment found that the best results in the breeding of mealworms are achieved by insects, which are fed with a mix of feed in which the largest amount was harvested. Successful breeding of edible insects, however, requires the interplay of several conditions. The choice of feed is one of the important criteria to be addressed. This work is a basic study which can be followed by more detailed experiments.
Optimization of breeding of darkling beetles due to possible use in human nutrition

This thesis was created to find a suitable substrate for feeding the larvae of the darkling beetle (Zophobas morio) intended for human consumption, as well as to find out if the larvae contain, among other substances, gluten. This species is very suitable for entomophagy for its breeding simplicity and nutritional composition especially rich in fats and proteins, similar to its relative, mealworm beetle (Tenebrio molitor). The topic of entomophagy is currently up-to-date due to the growth rate of the human population, whose needs are increasingly burdensome for the environment. At the same time, insect production is cheaper and more efficient than the production of the conventional meat (beef, pork, poultry) and also consumes less water. For the purpose of the experiment, 540 larvae were kept under the same conditions, divided into groups of 15 individuals with a total initial weight of 1g. 9 repetitions were made for each of the four selected substrates. The experiment lasted 3.5 months and during this time 8 measurements (weighing) were performed. The larvae feeding on substrates containing gluten were growing faster in the first half of the development, but there was no statistical difference between the final weight of the larvae on the different substrates, the average weight of one larva was between 0,7248 g and 0,8048 g. Laboratory analysis failed to detect the presence of gluten, the protein content ranged from 25 to 34%, the fat content was between 49 - 61%, these values are eventually compared with the results of other authors.
Innovation of device for mealworms breeding

The task of the work was to get familiar to the reader with the possibilities and conditions of edible insect breeding in the Czech Republic, focusing on a selected species of darkling beetle (Tenebrio molitor). Design optimization of breeding conditions for different stages of breeding, with the possibility of accelerating breeding. Another part of the work was to get acquainted with the properties of the microcontroller series Espressif ESP32 and its use in the areas of simple product management. From these identified conditions, a breeding station was designed and gradually implemented in the second half of the work, which was controlled by this microcontroller company Espressif ESP32. The work describes the proposed components for measuring and regulating breeding conditions with a focus on temperature, humidity, food and fluid dosing. The penultimate chapter mentions experimental measurements of regulated conditions with evaluation of measured data. The conclusion is the evaluation of the solution and its other possibilities.
Processing of selected species of edible insects for food purposes

Táto diplomová práca je zameraná na nutričné zhodnotenie vybraných práškov hmyzu zo svrčkov domových, z lariev múčiara obyčajného a potemníka stajňového a jedného potravinového produktu na báze hmyzu, ktorý bol tiež vyvinutý ako jeden z cieľov tejto práce. Okrem základných nutričných analýz boli použité aj ICP-OES pre zistenie obsahu minerálov a GC-FID pre zistenie zloženia mastných kyselín. Tiež bol stanovený obsah hrubej bielkoviny pomocou CHNSO analyzátora a stanovený obsah EAA. Pomocou PCA analýzy sa úspešne podarilo rozlíšiť vzorky jednotlivých hmyzích práškov, ktoré potvrdili rozmanitosť jednotlivých druhov hmyzu a vďaka projekcii do roviny hlavných komponent je možné vidieť, v ktorých nutričných parametroch sa najviac líšia. Bola tiež vykonaná senzorická analýza novo vyvinutého produktu na báze hmyzu s prídavkom prášku z potemníka stajňového v porovnaní s konkurenčnými produktmu. Súčasťou práce je aj rozsiahly spotrebiteľský prieskum na vzorke 2 019 účastníkov, týkajúci sa vnímania entomofágie v Českej republike a na Slovensku, ktorý sa uskutočnil online.
