Vliv genotypů pro gen leptin na vybrané kvalitní ukazatele hovězího masa

The dissertation "The Influence of Genotype of Leptin Gene on Qualitative Characteristics of Beef" describes the effect of polymorphisms of gene of leptin on selected qualitative, morphometric and weight indicators of beef and carcass. The analysis was carried out on 333 bulls of Czech Fleckvieh, which were genotyped (by PCR/RFLP method) of chosen locus. This locus is associated with qualitative changes in beef according to previous foreign studies. The weight of carcass, fore and hind quarter of the right half of the carcass, the weight of the individual tissues (meat, bone, and fat) and the weight of main meaty parts from the right half of carcass were measured. Before the dissection chosen morphometric indicators were measured. After the dissection, a sample of the musculus longissimus lumborum et thoracis was taken and then analysed in the laboratory. Basic chemical composition (dry matter, fat content, protein, and ash), muscle fibers diameter and fatty acid profile was determined. In addition, pH, added water holding capacity, colour (CIE Lab colour coordinates) were analysed both for one-day post-mortem and after 14 days of ageing. The shear force (using the Warner-Bratzler probe) was evaluated at the same time intervals as for both raw and heat-treated samples by grilling. The studied LEP polymorphism had a statistically significant effect on the weight of the hot carcass, the weight of right half of carcass and fore and hind quarter. LEP polymorphism significantly affected the proportion of meat on the right half of carcass, the weight of the bones and total weight of the I. class meat, and the weight of the I. class meat in the fore quarter. Further, the effect of LEP polymorphism on the weight of boneless round, boneless chuck, plate, flank, rib, hind shank, and meat trimmings of fore quarter was found. In a group of morphometric indicators, the effect was significant on lengths of round, fullness of round and round circumference. In the case of chemical composition, the effect of LEP polymorphism on the intramuscular fat content was significant. From the qualitative indicators, the effect was significant on the pH value and added water holding capacity, both one-day post-mortem and after 14 days of ageing. In the case of tenderness, the effect on shear force of heat treated, non-aged meat was significant. From the indicators describing colour, a statistically significant effect on the indicator of lightness was found in the case of unconditioned meat and after 14 days of ageing the effect was significant on the indicator characterising yellow colour and the colour saturation. Determination of fatty acid profile was carried out by gas chromatography. The effects of studied polymorphism and differences between LEP genotypes were found in myristic, palmitic, palmitoleic, linoleic, -linolenic, -linolenic, conjugated linoleic, eisocapentaenoic, docosatetraenoic, docosapentaenoic both n-6 and n-3 and docosahexaenoic acids. From aggregated indicators, the statistical significant effect of LEP polymorphims on PUFA content, omega-3 fatty acids content, and omega-6/omega-3 fatty acids ratio was found. In connection with other candidate gene loci influencing the quality of beef, the results of dissertation can be used in the preparation of breeding schemes aimed at the production of quality breeding animals, highlighting the higher quality standards of the produced meat.

The diploma thesis is dealing with the monitoring of quality of beef meat during the process of ageing. In the literary overview the terms beef meat and quality are defined, the consumption of beef meat is stated and the composition and attributes of the beef meat are described. The list of factors that influence the quality of beef meat follows. The factors are divided into intravital and postmortal. The postmortal processes are described more thoroughly; the possibilities and consequences of their abnormal progress and other quality defects are added. The practical part of the thesis is devoted to the comparison of chosen parameters of heifer meat (n = 6) of the Aberdeen Angus breed (AA) and Czech Fleckvieh breed (CS). In the cut-out parts Musculus longissimus dorsi (NR) and Musculus adductores (SŠ) the parameters of pH, electrical conductivity and color were observed for eight weeks of aging in the vacuum (1-2 °C). The color was measured spectrofometrically with the application of the CIELAB color space.

The main goal of this bachelor thesis is to characterize actual market in the Czech republic and its trends of commodity meat of cattle. In the first part are described general topics, which will make this thesis complex. In this part we can find economic theory of market functioning or about agribusiness, characteristic of chosen commodity, but also process of commodity vertical and its part. In the second practical part is analyzed and graphically expressed economic context of this commodity market. On the end of this bechelor thesis will be evaluation of several aspect of this market, which include for example development consuption and production, meat of cattle prices developments, but also foreign trade with this commodity.
Modelling commodity chain of beef

The submitted diploma thesis deals with modeling the commodity chain of beef, namely the impact of the relevant variables in the production and consumption of beef in the Czech Republic. The thesis is divided into three parts. The first part deals with econometric modeling and general characteristics of the commodity chain. The second section summarizes the process and the economic aspects of beef production in our country. In the practical part there are formulated, specified, quantified and verified two econometric models. The first model deals with addiction beef production in selected variables. The second model solves the question of influences on consumption of beef. The prognosis of future development for the period 2016- 2018 was determined on the basis of these models. The latest model captures the price transfers within the commodity chain of beef.
Profit agribusiness in dependent to the development prices - beef

The goal of my bachelor thesis is to evaluate the potential seasonal fluctuation of the purchase prices of beef and to assess if there is a possibility to use the fluctuation of the prices on the business basis. In the literature search there is described the development of the cattle, meat consumption and the rate of self-sufficiency in the basic animal commodities in the Czech Republic. In this part of the work is also included the definition of the "price", its function and factors with an influence on price. In the third chapter there are defined the time series and their analysis, then you can find here the description of the trend models with the constant seasonality. In this part are also presented the following terms and facts about simple regression and hypothesis about the existence of constant seasonality. The practical part of my thesis is concentrated on the analysis of seasonal fluctuations of chosen beef commodities of agricultural market between 2008 and 2013. I preferred the commodities in prices of farmers, industrial producers and of course the consumer prices. In conclusion I carried out the analysis of the seasonality with the chosen commodities, it means, slaughter bulls (class A) in agricultural prices and beef in consumer prices in the time period from 1992 to 1997. For the quoted commodities is done the trend analysis too.
The economic result of the holding depending on price development - beef meat

The first phase this thesis deals with of agriculture and its two basic directions. I focused on development of price and its importance according to the perspective from whitch we look at it. In the second part the theoretical part, I explained the formulas, that where used in the second phase of this work. I compare here on the three stages of production price trend, whether there a constant seasonality is. Then I compare the volume of sales of beef for two different firms. There is foreign trade with beef in ČR. In the last part I compare income population, the consumption of beef and industrial producer prices in selected EU counties.

The thesis deals with the labelling and traceability of food. The system of traceability and identification is described. It introduces all types of identification on the market to the reader. It describes information, which should be listed on food labels and also required form of specification. Thesis also analyses the current system of labelling and traceability of beef. System is analysed from the calf birth through data in a slaughterhouse to modified meat in the shops. It describes necessary labelling of packaged meat or of non-pre-packaged meat.

The main goal of this bachelor thesis is to characterize the development of the cattle meat commodity in the market in the Czech Republic. In the introductory part of the work the agricultural market and agribusiness theory are described. In this context the commodity vertical of food is generally described and cattle meat is characterized. The cattle meat commodity vertical is then specifically described including the description of the individual parts of this vertical and influences that can affect the quality of the cattle meat including the quality classification of the slaughter-modified body. The development of the market is described in the world, European and national scale. The consumption in the Czech Republic is then compared with the production of selected European countries. The final part of the work is dedicated to the development of the cattle meat commodity price and to the international trade with living cattle and cattle meat between the Czech Republic and other countries.
The assessment of price developements of beef in selected EU countries

The main aim of this thesis is describe and evaluate the price trend of beef in selected countries of European Union during the years 2003 - 2013. In the first part of this thesis you can find theoretical knowledge from the sphere of price or agrarian market. The practical part describes the development of price of beef in selected countries using various statistical indicators and mathematical-economic methods. The conclusion contains a description of the current situation of beef on the world market including its prediction on the basis of international institutions such as the OECD, FAO and FAPRI.

This work focuses on increase, carcase and slaughter value. It should be mentioned that the growth of cattle is carried out intensively to six months of age. This period is necessary to pay great attention to the animal, as it affects the production period of the individual. Optima nutrition and quality WELFARE ensures that the animal will be in the coming years economically important for its farmers. One of the most important indicators of the carcass dressing percentage, which is the breed of Czech Pied cattle is around 58%. Net increase, however, is an important indicator of meat production are taken into account when breeding. Compared with heifers, bulls higher carcass yield and a lower propensity for fattening. For heifers has been shown that the age at slaughter has a significant impact on their meat production.
