Vliv krmiv na výnos jatečního materiálu hmyzu (Tenebrio molitor)

Bachelor thesis consists of theoretical and practical part. The theoretical part of this work deals with the consumption of edible insects both in the world and in the Czech Republic. Furthermore, the advantages and disadvantages of the consumption of edible insects and their nutritional value are described. It also includes characteristics of the mealworm (Tenebrio molitor). An important part of the thesis is the practical part, whose aim was to determine the effect of different types of protein feed in the breeding of mealworms. Here their effects on the weight yield of insect slaughter material were compared. The experiment was carried out using four types of protein feed: plant protein (soy), animal protein (dehydrated eggs), complex feed (feed for aquarium fish) and mix of the above feed. Breeding took place in the months of October - December 2019. Two experimental generations of adult insects were bred for egg production. The subsequent egg separation produced separate generations of insects which were fed for fifty-two days. The experiment found that the best results in the breeding of mealworms are achieved by insects, which are fed with a mix of feed in which the largest amount was harvested. Successful breeding of edible insects, however, requires the interplay of several conditions. The choice of feed is one of the important criteria to be addressed. This work is a basic study which can be followed by more detailed experiments.
Optimization of breeding of darkling beetles due to possible use in human nutrition

This thesis was created to find a suitable substrate for feeding the larvae of the darkling beetle (Zophobas morio) intended for human consumption, as well as to find out if the larvae contain, among other substances, gluten. This species is very suitable for entomophagy for its breeding simplicity and nutritional composition especially rich in fats and proteins, similar to its relative, mealworm beetle (Tenebrio molitor). The topic of entomophagy is currently up-to-date due to the growth rate of the human population, whose needs are increasingly burdensome for the environment. At the same time, insect production is cheaper and more efficient than the production of the conventional meat (beef, pork, poultry) and also consumes less water. For the purpose of the experiment, 540 larvae were kept under the same conditions, divided into groups of 15 individuals with a total initial weight of 1g. 9 repetitions were made for each of the four selected substrates. The experiment lasted 3.5 months and during this time 8 measurements (weighing) were performed. The larvae feeding on substrates containing gluten were growing faster in the first half of the development, but there was no statistical difference between the final weight of the larvae on the different substrates, the average weight of one larva was between 0,7248 g and 0,8048 g. Laboratory analysis failed to detect the presence of gluten, the protein content ranged from 25 to 34%, the fat content was between 49 - 61%, these values are eventually compared with the results of other authors.
Innovation of device for mealworms breeding

The task of the work was to get familiar to the reader with the possibilities and conditions of edible insect breeding in the Czech Republic, focusing on a selected species of darkling beetle (Tenebrio molitor). Design optimization of breeding conditions for different stages of breeding, with the possibility of accelerating breeding. Another part of the work was to get acquainted with the properties of the microcontroller series Espressif ESP32 and its use in the areas of simple product management. From these identified conditions, a breeding station was designed and gradually implemented in the second half of the work, which was controlled by this microcontroller company Espressif ESP32. The work describes the proposed components for measuring and regulating breeding conditions with a focus on temperature, humidity, food and fluid dosing. The penultimate chapter mentions experimental measurements of regulated conditions with evaluation of measured data. The conclusion is the evaluation of the solution and its other possibilities.
Processing of selected species of edible insects for food purposes

Táto diplomová práca je zameraná na nutričné zhodnotenie vybraných práškov hmyzu zo svrčkov domových, z lariev múčiara obyčajného a potemníka stajňového a jedného potravinového produktu na báze hmyzu, ktorý bol tiež vyvinutý ako jeden z cieľov tejto práce. Okrem základných nutričných analýz boli použité aj ICP-OES pre zistenie obsahu minerálov a GC-FID pre zistenie zloženia mastných kyselín. Tiež bol stanovený obsah hrubej bielkoviny pomocou CHNSO analyzátora a stanovený obsah EAA. Pomocou PCA analýzy sa úspešne podarilo rozlíšiť vzorky jednotlivých hmyzích práškov, ktoré potvrdili rozmanitosť jednotlivých druhov hmyzu a vďaka projekcii do roviny hlavných komponent je možné vidieť, v ktorých nutričných parametroch sa najviac líšia. Bola tiež vykonaná senzorická analýza novo vyvinutého produktu na báze hmyzu s prídavkom prášku z potemníka stajňového v porovnaní s konkurenčnými produktmu. Súčasťou práce je aj rozsiahly spotrebiteľský prieskum na vzorke 2 019 účastníkov, týkajúci sa vnímania entomofágie v Českej republike a na Slovensku, ktorý sa uskutočnil online.
Návrh marketingové strategie - hmyzí protein jako běžná součást lidského jídelníčku

This bachelor thesis deals with the creation of a marketing strategy for products containing insects, some of which are included in the list of novel foods thanks to new legislation in the European Union. The aim is to design marketing strate-gies based on SWOT analysis, which would help to increase sales of insect prod-ucts in the Czech Republic. This SWOT analysis is based on a literature research dealing with entomophagy, namely its history, current practice, environmental and nutritional aspects compared to the meat and legislation in the European Un-ion. Another source was an analysis of companies in the USA and the EU, which are already engaged in the sale of these products, and also the results of a question-naire survey, which was attended by 445 respondents. The result was the creation of 4 marketing strategies, and on one of them were also calculated the costs.
Využití jedlého hmyzu v potravinářství

The bacherol thesis deals with the use of insects in the food industry. Insect is being consumed in many parts of the world (Asia, Africa, South America) and we can find it throughout history. Approximately 1 900 insect species are eaten worldwide. The most consumed insect species in the Czech republic are: House cricket (Acheta domesticus), Field cricket (Gryllus assimilis), Superworms (Zophobas morio), Mealworm beetle (Tenebrio molitor), Migratory locust (Locusta migratoria) and Giant Cave Cockroach (Blaberus giganteus). Insects have rich protein, amino acid, fat, fatty acid, carbohydrate, mineral elements and that promote human health. As protein sources, the nutritive value of edible insects is as good as other animals or plants. Some insect products are used as additives in food production. When consumed, there may be potential risks due to allergic reactions or toxic substances in insects. There are many ways in which insects can be culinaryly processed. The range of edible insect food products is still developing.
The gas monitoring equipment in breeding of edible insects

Bachelor’s thesis deals with monitoring of edible insects. The most monitured element will be dangerous gases. In the first part will be discussed the life cycle of edible insects and associated ecological consequences. Another part is description of measuring non-electric variables. This knowledge will be useful in design of breeding box in practical part of bachelor’s thesis. Design contains selections and description of used components and their locations on breeding box. Breeding box is managed by microcontroller ESP32 from Espressif family. Practical part contains first results of measuring and program for microcontroller. The results are in the form of a graph. Breeding box can be used for most terrarium animals.
Device for measurement and regulation of edible insect breeding conditions

This work focuses on the design and realization of a measuring and regulatory system for successful breeding of edible insects with a focus on the mealworm (Tenebrio molitor). For the correct setting of the system, the first part of the work is detected and described the general conditions of insect breeding. The description is mainly focused on the mealworm, its development and basic breeding conditions (temperature, humidity, etc.). This information is further used for the development of breeding equipment, the basic concept of which is further established at work. The device is controlled by espressif's ESP32 microcontroller. The work acquaints with its programming and the connection and programming of basic components for the proposed system. Experimental measurements verify the functionality of measurements and regulation in the breeding box. The regulation is accurate to tenths to hundredths of ° C.Last but not least, the design is compared with existing devices.
Edible insects and its position in nutrition

The aim of a bachelor's degree on "Edible insects and their position in nutrition" is to map the consumption of edible insects with surveys answered by respondents who have tasted or regularly eaten insects in the past. Two research questions had been identified: 1) What are the most common types of edible insects consumed in the Czech Republic, and; 2) What nutritional benefits they represent from the subjective point of view of insect consumers. The theoretical part of this bachelor's thesis is focused on getting acquainted with the concept of entomophagia and its position in human nutrition in other parts of the world and in our country. As well, there is listed nutritional composition of selected insect species and interesting points related to the way they are modified, used and consumed in selected countries. The practical part was made based on the evaluation of the results from the pollsurvey answers of the respondents who participated in the catering event called "Big Insect Evening" at the local restaurant "Club of Travelers" in Brno. Based on the evaluation of the survey it was found that entomophagia is currently only taken as a trend of modern gastronomy though not popular. It must be said that according to people's opinion, the interest in eating edible insects will gradually increase in the future: respondents said that after overcoming the psychic barrier, the taste of the insect was surprisingly positive, but they were not able to say with certainty whether they were not able to say with certainty whether they would start to search for it or rank it among their eating habits.
Produkce skleníkových plynů u vybraných druhů jedlého hmyzu

The aim of this diploma thesis was to gather available information relating to the produ-ction of greenhouse gases from edible insects, and impact of these gases on living orga-nisms and the environment. The practical part of this study was to measure the production of greenhouse gases for selected species of edible insects. During this measurement, it was found that the produ-ction of greenhouse gases in the edible insects compared with livestock almost compa-rable. Another part of the experiment was to compare the production between the rich and the hungry insects. In this comparison, some groups found statistically significant differen-ces. This information is important for starvation of edible insects in front of kitchen preparation. Based on the obtained values can recommend a factory farm edible insects.
