This bachelor thesis aims to show and demonstrate the main differences between native milk protein and whey protein, both from the nutritional and sensory point of view. The theoretical part is devoted to general information about milk, whey and supplements in sports nutrition. Great emphasis is placed on the production of individual preparations and various types of proteins. In the practical part, tasting of native milk protein and whey protein was performed. In the end, the sensory properties of both preparations were evaluated.

This bachelor's thesis includes literary research of the topic "The role of carbohydrates in sports nutrition. The first part of the work describes the importance of carbohydrates and other macronutrients in nutrition, the role of carbohydrates in the nutrition of a person engaged in sports. The work includes information about the energy value of food. The second part of the work describes in detail types of physical activity and their difference on the biochemical level. This bachelor work presents recommendations of the intake of carbohydrate food regarding people with different time intervals of physical activity. Also, the work mentions metabolic changes in the physiological system of the human body during different types of physical activity.

This diploma thesis „Real nutrient intake among bodybuilding athletes during competition preparation“ examines the nutritional habits of male and female bodybuilders. The theoretical part describes energy metabolism, nutrients, nutritional supplements and frequently used diet approaches. This thesis brings up the latest scientific recommendation adressing the topic. Last but not least, it approximates the specifics of bodybuilding. The practical part consists of evaluation of a questionnaire spread among athletes in bodybuilding and fitness. The results show that competitors consume protein in excess of the general recommendations, they do not reach the recommended intake of carbohydrates, dairy products, legumes and fruit. The positive findings are the intake of high quality protein, vegetables, a sufficient water intake, preferences for whole grain foods, plus low intake of animal fats and sugar. The most used supplement was protein powder. There was statistically significant (p < 0,05) dependence between the low energy availability and menstrual cycle dysfunctions among female competitors. There was no statistically significant (p > 0,05) dependence between competitive experience and dietary strategies during preparation among competitors.

This bachelor thesis is focused on the importance of individual macronutrients in sports and its aim is also to clarify their use in various types of sport performances. The first part is dedicated to clarifying of the concept of nutrient timing and the basic characteristics of individual macronutrients. Subsequently their structure, importance, and metabolization is described. The next part is devoted to determination of the optimal energy intake of the athlete and to the description of energy systems that provide the body with energy to be able to perform sports activities. The following topics are nutritional strategies in endurance and strength sports, which can influence the development of performance and support the growth of muscle mass. The last part is devoted to the questionnaire research and its aim is to find out how active amateur athletes are informed about the use of nutrition timing, and whether they practise this nutritional strategy or not.

This diploma thesis is focused on the nutritional analysis of food composition and energy intake of elite swimmers. The first chapter presents the introduction and objectives of the work, the second and third chapters constitute the theoretical part of the thesis, which lists the priorities of sports nutrition, its components, the characteristics of swimming as a sport, methods for determining energy intake and expenditure. The practical part is focused on the nutritional analysis of food and determination of energy intake and energy expenditure of swimmers in order to find out whether the energy intake of swimmers is sufficient with respect to their energy expenditure and whether all macronutrients are represented in the ranges recommended for swimmers.
Nutrition in sports fencing

The bachelor thesis focuses on Nutrition in sport fencing. First of all, in the theoretical part, sport fencing is described in order for the reader to learn more about this discipline. Next, the thesis illustrates nutrition in sport. Macronutrients and micronutrients are explained in detail. Since fencers wear many layers of fencing clothing, drinking is also included. This work also mentions atypical days in terms of fencers' diet. This is particularly the case during fencing competitions, when it is not possible for individual athletes to indulge in a proper diet, and they are forced to substitute in other ways. Most often they choose so-called fast carbohydrates or special sports foods. The aim of the bachelor's thesis was to identify, clarify and compare the nutritional habits of fencing athletes in the training and competition phase, including clarification of their attitudes towards following the principles of healthy nutrition in sport, and possibly suggest changes in their eating habits. Thus, the research population consisted of fencers in sport fencing. A quantitative research method was used. Data were collected using a questionnaire and dietary records. These were randomly evaluated in the program "Nutriservis professional" and then in Microsoft Excel the obtained survey results were tabulated. The questionnaire was distributed to 20 respondents and contained 57 questions. Their eating habits during the separate phases of training were thus more comprehensively investigated. The results were processed in the form of graphs in Microsoft Excel. The results show that the diet of sports fencers is not quite perfect. Although the principles of healthy nutrition recommend these foods, dairy products, whole grains, fish, and nuts are very often missing from the diet. Fruits and vegetables are also under-consumed, and many fencers eat fast food or drink sugary drinks.
The challenges of dietary supplements in sports nutrition.

This bachelor thesis addresses the issue of dietary supplements in athletes' nutrition. It is a topic of increasing significance in recent years, as many athletes use various dietary supplements to enhance their performance. The theoretical part of the thesis focuses on nutrition, macronutrients, hydration, and introduces dietary supplements commonly used in sports nutrition. The practical part employs a qualitative method and collects data through semi-structured interviews with seven strength athletes and seven endurance athletes who use dietary supplements.

The diploma thesis on “Possibilities of using malts for sports nutrition“is focused on the production of malts and their use in sports supplements. The theoretical part is devoted to individual cereals and pseudocereals, their nutritional composition, individual nutri-ents and their importance in nutrition and some possible products for sports nutrition. The practical part includes the production of single malts from selected cereals and pseudocereals and the production of experimental products that could have applications in sports nutrition. The products were then analysed for sensory analysis and nutritional value was determined.

Abstract The first part of this diploma thesis "Medium Chain Fatty Acids in Sports Nutrition" focuses on a literature research of topics regarding rational nutrition and its history, the importance of fats in nutrition, a more detailed review of fats in sports nutrition. It also describes the impact of medium-chain fatty acids (MCTs) on the human body and on performance in sport. The practical part of the work focused on the design of a suitable methodology for the determination of fatty acids and the analysis of available MCT-containing dietary supplements by using gas chromatography. Based on the measurement results, the fatty acid profile of the samples was evaluated, a statistical evaluation was performed and the measurement results were compared with the nutritional information of the products as labelled on the product packaging. The diploma thesis also included a questionnaire that was designed for a general audience in order to determine the knowledge of supplements and the popularity of dietary supplements containing MCTs. The aim of this thesis was to provide as comprehensive an overview as possible of medium chain fatty acids and their impact in sports nutrition by using a various information sources, and to determine whether respondents had an overview of MCTs based on the questionnaire and to conduct an analysis of fatty acids in MCT-containing products.
Nutritional deficiences in vegan endurance athletes

Aim: This study aimed to investigate whether vegan endurance athletes, specifically runners, experience nutritional deficiencies due to a purely plant-based diet. Partial goals were set to evaluate whether these athletes have sufficient energy intake and receive adequate macronutrients and risky micronutrients. Methods: The research was conducted as a pilot study for the extensive European project VEGANScreener. Based on the completed questionnaire and meeting the criteria, 11 participants (n = 11) were selected. The subjects underwent body composition analysis using bioimpedance, their resting energy expenditure was measured by indirect calorimetry, and blood was taken. The subjects then performed a 4-day food record (self-reported 4-day Dietary Record), which was analysed using new software. The complete dietary record was analysed for only eight subjects (n = 8). Nutritional data were analysed using the left-sided Mann- Whitney U test, which belongs to the group of non-parametric tests. The test was conducted at a significance level of α = 0.05. Results: The average BMI of the subjects was 20.87 ± 1.58 kg/m2. Two subjects (n = 2) had a lower body fat percentage than is adequate.
