This diploma thesis deals with microbiology of delicatessen. It focuses on the microbiology of individual components of delicatessen, particularly bacteria which can cause alimentary infections and alimentary intoxication. The thesis also discusses the possible occurrence of molds or yeasts and describes ways how it can be prevented. It also refers to some of the basic measures stated in the legislation. At the end of the thesis, the numbers of selected groups of microorganisms in paneled sandwiches and production areas are determined: total count of microorganisms, coliform bacteria, molds and yeasts, spore aerobic microorganisms, Clostridium perfringens, Salmonella spp.

This bachelor thesis is aimed at microbiology of delicatessen. It focuses mainly on raw materials used for the production of delicatessen, describes the possible contaminants of raw materials, as well as the final product, and deals with bacteriae which cause alimentary infections and alimentary intoxication. Possible precautions against these microorganisms are listed together with their legislative incorporation. The experimental part presents a microbiological analysis of "vlašský salát". Also, important groups of microorganisms have been determined (TPC, coliform bacteria, micromycetes, enterococci).

The aim of the dissertation on the topic of "Status of organic farming in the Southern Moravia region with a focus on organic viniculture and winemaking" was, within the literary overview, to characterize principles and condition of organic farming in the Czech Republic with a focus on the viniculture and winemaking. The aim of the experimental part of the thesis was to elaborate general overview of the subjects registered in the system of organic farming in the Southern Moravia region. The overview of organic subjects in the Southern Moravia region was elaborated from the publicly accessible data MZe CR (Ministry of Agriculture) which were analysed and the results were elaborated into the charts and graphs. The subjects of the organic grapevine producers and manufacturers were characterized in detail. The questionnaire for the grapevine producers and manufacturers was created to take care of the situation while running the organic viniculture and winemaking in practice (finding out negatives and positives). The feedback of the research was higher than 50%. The crucial findings are following: the interest in the organic grapevine producing and manufacturing is constantly rising with the help of not only financial support, but also the interest to protect nature and consumers. On the other hand the disadvantage of the organic farminf is higher demands on manual work and knowledge of the farmer.
