The purpose of this bachelor thesis is to analyse the development of production and consumption of food products on the Czech market, to determine the level of self-sufficiency and conduct factor analysis of selected plant and animal commodity aggregates in the period from 2002 and 2015. Specifically animal products: milk, meat: pork, beef, poultry, eggs and plant: fruit and vegetables. Generally they describe the trends and tendencies that influence developments on the Czech food market. Correlation analysis and point elasticity or descriptive statistics like median, average, minimum, maximum, and standard deviation were used to achieve the target. The result of this thesis is a complete analysis and definition of results and causes of production development: The production decline in commodity aggregations like pork, poultry, then the eggs of chicken, vegetables and fruits, fluctuating development trend of production was at meat beef and conversely the only growing trend of production was for milk. Subsequently, the result was defined by completing the analysis of consumption of those products like: a slightly downward trend in the consumption of pork, chicken eggs, significantly decreasing trend in beef consumption, while growing trend in the consumption of milk and milk products, poultry, vegetables and fruit. The result was also to determine the degree of self-sufficiency of selected products, with the highest rate appeared to be in beef meat and milk with all the other aggregates the consumption was higher than production. And finally: defining the dependence of the volume of consumption of products on the following factors: the gross money income of the population of the Czech population and development in consumer product prices and the subsequent measurement of the strength of the dependence. Dependence occurred in beef and pork on the size of income, and so for this kind of meat to consumer price developments.
