Changes in the sensory quality and volatile compounds profile of smear ripened cheese during storage

This bachelor thesis deals with the changes in sensory quality, volatile compounds profile and microbial profile of two smear ripened cheese, Olomoucké tvarůžky and Romadur, during their storage for four weeks. The sensory analysis, specifically the assessment of appearance, colour, texture, aroma and taste, showed differences between the two cheeses, which increased during storage (ripening). The greatest differences were observed in the assessment of taste, which improved during ageing for Olomoucké tvarůžky and deteriorated for Romadur. Analysis of volatile compounds by headspace solid-phase microextraction coupled with gas chromatography and mass detection revealed the presence of 57 substances belonging to 9 chemical groups. The composition of the cheese varied in terms of number and content of compounds, with alcohols, ketones and acids being the most abundant. In Romadur, esters predominated quantitatively, and in Olomoucké tvarůžky, sulphur compounds. The total amount of volatile substances in tvarůžky increased during maturation, whereas the opposite was true for Romadur. Microbial analysis showed the presence of a diverse microbiome on the surface of the cheese. There were slight differences between the microbial composition of the cheeses. There was no evidence of change in the microbiome during ripening. The qPCR method was used to identify the microorganisms present.
Support of autonomous decision-making of clients in homes for the elderly

The diploma thesis deals with the support of autonomy of the elderly in homes for the elderly. It points out its essence, especially from a philosophical and psychological point of view. It describes what changes a senior goes through in old age and how they affect his autonomy. It is important to understand that not everyone perceives autonomy in the same way, and this is the subject of the third chapter. Next, the thesis concentrates on the possible support for the autonomy of the elderly in homes for the elderly, but in order to provide this appropriately, it is necessary to understand how the elderly adapt to their old age. Taken together, the findings underline the importance of supporting senior's autonomy.
Support for carers for the elderly discharged from the hospital for home care.

The bachelor thesis is devoted to support of carers for the elderly in the home environment. It describes the essence and goals of home care. It also deals with the situation of a senior discharged from the hospital, the importance of his needs and why it is important to satisfy them. It also describes social services for seniors, which can be used to saturate the needs of seniors. The work also describes the image of informal carers and deals with the burden of caring for the elderly. It also describes the possibilities of carers support, prevention of burnout, mental hygiene and social services for carers - counseling, self-help groups, respite services. The aim of this thesis is to introduce the issue of social work with the elderly and his/her family carers with regard to the possibilities of supporting carers.
