The thesis entitled Barrique wine deals in the teoretical part with technology of production of red wine from grape harvesting after wine training. This is followed by the ri-pening of wine in barrique special barrels whose chemical wood composition is described the same as its influence on the wine quality. Furthermore the thesis describes the chemical composition of wine and biologically active substances in barrique wines. The last chapter of the theoretical part deals with methods in the analysis of polyphenolic compounds. In the practical part the work focuses on the identification of polyphenolic compounds in barrique wines. This happens in seven samples of wines and on the monitoring of changes in the content of substances during extraction of oak chips in ethanol. For detection High performance liquid chromatography in tandem with a mass spectrometry was used.

The present time, which is characterized by very strong downward pressure on price, forces wine producers to look for new technological processes that would enable them to offer cheaper wines without reduction of quality. Mechanization innovations enabling more economical works in vineyards and wineries are already absolutely commonplace. The winemakers try to look for savings in further technological steps. One branch of technological developing, which is opening, is the branch of alternative wine aging methods using the aging-substitutes such oak chips, staves or using oak dust. All these alternative wine aging methods open a wide variety of possibilities, when winemakers can choose from variety of shapes of different oak substitutes, geographically diverse wood types, different types of toasting or different time of contact substitutes with wine. Many studies and experiments have been created for this topic, and we can expect very rapid development of the knowledge about of this branch winemaking technology.
