Umělá barviva v potravinách a jejich dopad na zdraví člověka

This bachelor thesis is dealing with synthetic food dyes and their impact on human health. Synthetic dyes are suspected of having a toxic effect on living organisms, which is proven for some of these substances by experiments on animals. The experimental part of this thesis is focused on the determination of the quantity of these synthetic food dyes in 12 selected samples of commercially available products by means of spectrophotometric multi-component analysis. The amount of synthetic food dyes was determined in 3 samples of al-coholic beverages, 6 samples of non-alcoholic beverages, 2 samples of food and in one food supplement. Subsequently, these results were compared with the maximum allowable quanti-ty (MPM) of synthetic food dyes for each food category set by the legislation. All beverages, including one food supplement, which is recommended to be consumed in aqueous solution, have been complied with given numbers of the MPM. However, two samples of eatables (specifically chewing gum) did not meet these numbers and the amount of synthetic dyes was above limits in them. In the case of these samples, it would be appropriate to carry out an additional verification by another method and, if the high quantity of synthetic food dyes would be confirmed in them, to recommend their withdrawal from the market.

This bachelor thesis contains an overview of the most used natural, nature-identical and synthetic food colorants. Colorants are divided into groups according to their chemical structure (polyene colorants, indole colorants, triphenylmethane colorants etc.). Acquisition of colorants by extraction techniques is shown in several representatives of natural colorants. The thesis also contains some most frequently used analytical methods (UV/VIS spectrometry, chromatography, electrophoresis and polarography), which are used for detection and determination of food colorants. Terms of coloring foodstuffs are defined by the applicable laws of the Czech Republic and the European Union, which are also part of this work.
