Blood has a similar protein content compared to meat, mainly has a high biological value and contains iron as well as other minerals that contribute to human health. There is also the risk of an alimentary risk, which is part of all meat products. In the next part, meat production, the distribution of meat products and, above all, the list of blood meat products and their recipes are distributed. Also described here is the issue of regional food in selected countries, traditional meat products and domestic slaughter of pigs.

SKYPALOVÁ, Michaela
The objective of this study is to locate and gather available information about organic farming in the Czech republic. There are several interesting aspects of the world environment friendly economy. In the introduction chapter development swine-breeding and pork consumption in our country is outlined. The main part of this study compares the difference between conventional farming and organic farming. Considerable part of this work is focused on various categories of pigs with the emphasis on welfare. Principles of group housing of sows and piglets are also mentioned, as well as an outdoor pig housing, which is still only marginally used in the Czech Republic. The work includes principles of nutrition and feeding pigs in each categories of pigs according to ecological principles, which are very different from the normal feeding on the basis of complete feed mixtures. The work also describes the principles of slaughtering animals in organic farming. It is irreplaceable that swine-breeding is not subsidized, only through arable land, which produces feed. The question is whether the subsidy is sufficient at higher field intensity of production and consequently organic swine-breeding.

Meat production from agricultural farm (cattle, deer and fallow-deer) in the Czech Republic
JEŽKOVÁ, Irena
The demands on hygiene and food safety has increased at present. Increasingly numerous consumer sites indicate the quality or rather "non-quality" large quantities of food products, and meat products. These trends must be necessarily supported by appropriate legislation. It means legislation in Czech Republic and even legislation in the European union. Farm meat production from livestock with the representatives of deer bred on farms (since 1999) has strict rules under the legislation in force that must be strictly followed. It relates carrying out the slaughter and meat cutting on farm. We have to fulfill these conditions. Among other things we have to develop HACCP system based on existing legislation for slaughtering and meat cutting.
