This Bachelor's thesis is focused on honey and its microbiological parameters. The theoretical part contains definitions of honey and its historical context. Furthermore, it describes the process of honey creation and its natural sources: nectar and honeydew. The thesis further describes physical and chemical attributes of honey, its composition, and antimicrobial properties. In the last part of the literature review, the microorganisms which could contaminate honey are described. In the empirical part the thesis examines samples of honey using a microbiological analysis. The aim of this experiment is to prove that honey has a composition and properties which are unfavourable for growth and procreation of microorganisms.

This bachelor thesis deals with the importance of honey in the food industry. The first part deals with the characteristics of honey and the description of different types of honey. It has an important role in the food industry, both in the beverage and bakery and confectionery industries. Honey is one of the ingredients in the production of mead, copper beer, liqueur and honey vinegar. It is also part of cakes and gingerbread.

In this bachelor´s work I am trying to emphasize importance of bee´s grazing. A bee is an inseparable and indispensable part of countryside. In the first part there is an outline of economical and ecological significance of "Apis mellifera". Further I deal with description and introduction of pollen and its importance in nutrition of bees, pollen wimples, honey-giving plants, nectar and nectar-giving plants and also honeydew and its producers. Then I write about indicators of quality of bee´s grazing. In the next chapters there is description of sources of bee´s grazing during all the year according to phenological calendary. The second part is dedicated to poisoning of bees and how it is possible to protect bees.
Important plants in terms of pollen for bee-keeping in the summer and late summer in the area of the protected landscape Šumava

Objective of the work was to identify botanical origin of bee pollens collected from Protected Landscape area Šumava near the village of Volary and evaluate the importance of individual plant species in the diet of honey bees. The work also includes statistical analysis which examined how many subscriptions to a plant taxa occurred and what share has a certain plant taxon in the total pollen clutch. There were counted 18 different pollen taxa of bee pollens collected during summer and late summer of 2011. The work is complemented by photographs of selected pollen grains.
