Methods for assessment of body composition

This bachelor thesis deals with the composition of the human body and methods of its analysis. The theoretical part is focused on basic food nutrients, nutrition recommendations, energy needs of the organism, body composition and methods for determining body composition. The experimental part contains a comparison of two methods for determining body composition – a method of bioelectrical impedance and a method NIR-spectrometry. Other section is devoted to a study of the eating habits of group of students, consisting of evaluation of diets and the questionnaires.

Key words: Gastronomy, culture, Provence, history, quality of food, dining, gastronomic literature, social and cultural problems, Avignon, UNESCO, cultural heritige, culinary personalities. Abstract: This bachelor thesis proposes a summary of French gastronomy as a social and cultural phenomenon. The first part focuses on the history of French gastronomy from the Middle Ages to the end of 19th century with emphasis on the development of gastronomical literature and particularities of every period. The second part deals with contemporary situation of French gastronomy, with gastronomical constests and gastronomical celebrities. The third part presents the regional cusine of Provence, which means its ingredients, methods and traditions. The aim of the thesis is to present French gastronomy and to put it into the cultural framework with the accent on its importance for the French society.

Probe into the eating habits of Roma socially excluded in the location in České Budějovice

The theoretical part describes the general basis for the diet, then eating habits of Roma living in socially excluded localities and changes in their eating habits over time. The practical part follows the eating habits of Roma living in the socially excluded area in the Czech Budejovice, specifically in the street V. Volf. The data were collected through semi structured interviews (qualitative data collection). A total of 10 interviews were conducted with respondents living in the socially excluded area in the Czech Budejovice Máj on a housing estate in the street Volf V, which is defined in the analysis of socially excluded Roma localities and communities in the Czech Republic and absorptive capacity of organizations working in this field (2006). The interviews are recorded using case studies and subsequently evaluated.
