Způsoby marinování a nakládání ryb
Fichtnerová, Lenka
The bachelor thesis on the topic "Methods of marinating and pickling fish" deals with the characteristics of individual freshwater and marine fish species, which are the most used in the food industry, their nutritional value, and nutritional properties. The introductory part focuses on the description of specific fish species, the different components of fish meat and their impact on human health. Furthermore, special hygienic rules for handling fishery products were described, which are determined by both Czech legislation and European Union regulations. Subsequently, the various methods of fish processing that ensure the extension of the shelf life of fish meat are explained in detail. This is followed by a description of the various methods, including marinating, pickling, and preserving. Finally, the sub-processes are evaluated in terms of the processing requirements, the raw materials used and the shelf life of the products.

The comparison of production technology and conservation of bulky fodder in selected farm and recommendation for improvement
NOVÁKOVÁ, Vladimíra
The first part of this thesis deals with the history and description of roughages. Here, harvesting methods, processing principles and procedures and storage options are described. Also in this first part, the conservation of hay and haylage material is described. For haylage and hay, both sensory properties and laboratory evaluation according to the 'Standard 2004' (No 244/2000 Coll.), which is the most commonly used in the Czech Republic, are given. The most commonly used and commonly occurring clover and grasses are also characterised. Hay additives or preparations are divided into groups and microorganisms for preservation that are harmful or beneficial for biomass fermentation are included. This section concludes with a discussion of maize and the impact of roughages on livestock production. The second part of the thesis deals with the actual monitoring of the quality of roughages, mainly hay pit, hay bale, hay fence and hay bale. Mostly this part focuses on sensory monitoring of the properties of these feeds and laboratory analysis. It concludes with various recommendations that could improve the quality and economics of roughages.
Stanovení in vitro stravitelnosti organické hmoty kukuřičné siláže pepsin-celulázovou metodou
FOUS, Dominik
Silage, and especially maize silage, is the most abundant roughage both in the Czech Republic and in Europe. Silage compensates for a large part of the energy needed for the proper performance of animals. Stable efficiency and its increase can be ensured only by a constant and balanced composition of the feed ration throughout the year. Due to the importance of preparing quality feed, additives are often used. It is possible to add homofermentative bacteria to the ensiled mass with silage additives to rapidly lower the pH of the silage, or to add heterofermentative bacteria which improve aerobic stability in the silage, it is also possible to combine these bacteria or use other silage additives.
Účinnost vybraných postupů konzervace ryb na zachování morfometrických ukazatelů
VOGALOVÁ, Pavlína
This bachelor's thesis is focused on the topic of fish fixation and preservation. Experiments regarding various preservation methods are covered in many scientific ichthyological texts. Unfortunately, most of these works are exploring only one preservation method, so mostly there isn't the possibility of comparison with different methods using the same species. Aim of this work is introduction to preservation and fixation methods, that affect morphometric parameters of fish. Theoretical part of this thesis are procedures of fixation and preservation. The experiment itself is focusing on effect of preservation over time. Selected morphometric parameters were observed and measured in selected fish species to discover potential changes in these parameters. Measurements were being taken every two weeks for few months.
Historic Interiors and the Speech of Materials
Cichrová, Kateřina ; Lukášová, Eva ; Ourodová-Hronková, Ludmila ; Tejml, Ladislav ; Troupová, Ivana ; Raichlová, Michaela ; Caran, René ; Němec, Luděk ; Čekalová, Antony Sylva ; Bukovjanová, Radka ; Pešek, Vít ; Soukup, Libor
The methodology is a continuation of the work of the team of authors titled Metodika tvorby interiérových instalací a reinstalací (Methodology for Interior Installation and Reinstallation Design), published by the National Heritage Institute in 2011 (ISBN 978-80-87104-86-6). Individual chapters deal in more detail with several phenomena that, in addition to their undeniable and sometimes essential aesthetic role, had a primarily practical purpose in historical interiors. Historic floors, heating elements or upholstery have their irreplaceable place in interiors and they objectively testify to important details of the contemporary lifestyle. With the language of the material they testify to the taste and practical needs of their owners and they are a tangible testimony not only to the technical skills but also to the level of aesthetic sensitivity of their creators. In individual chapters, the publication deals in detail with these phenomena and the impact of their quality on the integrity of the historic interior and its narrative value. One part also describes how to use modern 3D technologies to reconstruct the no longer existing phases of the historic interiors. As an example, the publication presents the reconstruction of two interiors from the Manětín and Veltrusy Castles. The publication mainly provides practical information and instructions on how to apply and implement the maximum respect for the authenticity of the monitored elements (floor covering, historic heaters, all upholstered elements) within the framework of the rehabilitation of historic interiors. The informations are given on the basis of practical examples of possible solutions and supplemented by a large number of illustrative illustrations.

The Food Conservation in Roman Italy
Benková, Martina ; Titz, Pavel (advisor) ; Ondřejová, Iva (referee)
This document deals with problems of food preservation in the ancient world focusing on Roman Italy. Attention is concentrated on individual conservation practices, covering the techniques of storage and direct preservative interventions, which include dehydration, salting, sweetening, pickling, smoking or making of diary products. The work is mainly based on the study of contemporary literary works particularly Latin agricultural handbooks dating from the 2nd century BC to the 6th century AD. The information obtained is supplemented to the maximum extent by iconographic sources and archaeological evidence of individual installations and their products. The result is a comprehensive overview of preservation methods, divided into categories and subcategories based on used technology approaches characterized in the introduction to each chapter.
