Comparison of selected nutritional parameters of lesser known small fruit

The work deals with the chemical analysis of fruits and juices selected varieties of mulberry (Morus) and elderberry (Sambucus nigra L.). In the theoretical part there are the botanical characteristics of mulberry and elderberry, including the origin, history and prevalence. This part is focused on the content of active substances in fruits with a description of certain chemicals and the use of the fruit for food purposes. Finally, this section discusses methods for the determination of water content, soluble solids, pH, titratable acidity and formol number. In the experimental part was do determination in up in four samples of two varieties of mulberry and in samples of fifteen varieties of elderberry. Based on these results, it is possible to deduce the nutritionally important varieties. Mulberry Trnava and elderberry Sambu I contain the most water, and therefore are suitable for the production of juices. Unripe mulberry Trnava elderberries Samyl 2, Sambu I, Sambu 3 and Sampo I are the sourest varieties and they contain the highest content of mineral and organic acids.

The diploma thesis on the topic technological parameters and canning processing less known species of fruit is divided into theoretical part and practical part. The theoretical part describes contained substances less known fruit and describes these fruit such as mulberry, chinese hawthorn and saskatoon berry. In the last passage of theoretical part are describe methods of canning fruit. In practical part are describe methods, which are used for analysis of contained subsatances and next preparation of each products (juice, compote and dried homogenate) and their sensory analysis. From content substances were fruits richest on antioxidants , the highest content of antioxidants had chinese hawthorn and mulbery. According to the sensoric aspect the best evaluation was given to the chinese hawthorn, which could find a practical application on the market in the future.

Malfunctions, lesions and diseases on uncommon fruit trees was observed in the ŠZP Žabčice from April to October 2013. As the most important bacterial disease has been detected fire blight of the quince. Several sea-buckthorns died from multifactorial causes. There was incidence of powdery mildew and brown leaf spot on the Amelanchier, varieties of the A. alnifolia were more affected by leaf spot, while the varieties of the A. lamarckii had a significantly higher incidence of powdery mildew. On the rowan there was recorded scab and viral infection on the few trees. The minimum symptoms of diseases occurred on the dogwood, mulberry and rose. No symptoms of diseases were observed on medlar, but it was affected by chlorosis. Principles for the protection is correct agrotechnik and regular removal of infected and damaged parts of the trees.
