The eggs provide a huge amount of functional properties. In confectionery industry is mainly used foam and gel formation, emulsification, and effect on sensory properties. Those properties are affected by several factors, such as the breed and age of the hen, the age of the egg and mainly the method of processing the eggs. During processing can be crucial the temperature, the length and intensity of the processing and the addition of other substances (sugar, salt, water, acids and metal ions). By big producers are increasingly used the egg products, available in pasteurized liquid, frozen or dried form, like the whole eggs, egg whites or egg yolks. They are popular due to easier handling, lower economic costs, smaller storage space requirements and also to provide a certain degree of stability in quality. An egg is not replacable for a confectionery production. It provides a lot of functional characteristics which effect processing and properties of confectionery materials. Above all, the quality of a final product depends a egg, especially volume, stucture, texture, taste, smell and color.

Práce zaměřena na problematiku účtování a oceňování zásob. Vysvětleny druhy a základní pojmy zásob. Charakteristika způsobů účtování zásob, průběžný a periodický. Objasněny techniky oceňování zásob, pořizovací cena, reprodukční pořizovací cena, vlastní náklady, LIFO, FIFO, vážený aritmetický průměr, pevné ceny s odchylkami. Popsány zvláštní případy účtování zásob: reklamace, nevyfakturované zásilky, zásoby na cestě, zásoby v celních skladech. Charakteristika inventur a inventarizací, postupy účtování inventarizačních rozdílů. Výskyt položek zásob v účetních výkazech a jejich použití při výpočtech ekonomických ukazatelů.
