The bachelor thesis engages legumes in general, from their cultivation to their final processing. I focused on analysis of the chemical composition of the legume seeds and on the effect of the antinutritional factors on the contained nutrients. I worked in more detail on the use of the legumes for flour, on its use in bakery and on its influence on the resulting bakery products. Legume flours increase in the bakery products content of proteins, lipids, fiber and minerals and they decrease content of carbohydrates and gluten. They increase absorption of water and the development time of the dough. The stability of the dough is affected negatively. The stability is also prolongated by adding 10% of chickpea flour. Lentil flour increases water absorption and the development time of the dough since the addition of 50 % of flour. Final bakery products are less cambered, with the characteristic darker colour of the crust and with the characteristic taste. Legume flours are also often added into the dough of the cookies. Soya flour is even added into the donut dough to reduce the absorption of the fats during frying.
The Israeli-Palestinian relations and their impact on the Gaza Strip and the West Bank

This thesis is focused on the impact of the events that are connected with the Palestinian-Israeli conflict. The main focus is on the socioeconomic impact those events had on the Gaza Strip and West Bank. Therefore, the first chapter of this thesis summarizes the development in the area of today's Israel, Gaza Strip and West Bank territories in the period before the formation of the state of Israel to today. The second chapter continues with the socioeconomic description of those territories since the year 1967 until today. This chapter shows the influence of the occupation on the socioeconomic situation in the areas mentioned above and describes the socioeconomic changes that appeared in connection with the peace process in the nineties and also explains the influence of the current events on the socioeconomic situation in both areas. The thesis ends with a chapter that is focused on the main problems that appear when negotiating about the final status of the Palestinian territories, including the economic issues, and it outlines a possible solution of those problems in the case of a hypothetical decision for the existence of two independent states -- Palestine and Israel.
The economic development of Zimbabwe from the year 1980 to the present

The thesis is concerned with the economic development of Zimbabwe from its proclamation of independence in the year 1980 to the present. It is divided into single decades where it expresses economical and non-economical factors which influenced Zimbabwe. At the same time it is explaining the impact of these factors on the economy and standards of living. At the beginning of its independence Zimbabwe had good conditions for its future development. Through the years the Zimbabwean government has taken several measures and adopted some decisions, which determined the future development of this country. At the same time there were other factors which influenced the development of Zimbabwe. Essential was the issue of social dualism in the society, which was not settled until the year 2000. In 2000 land reform was started in order to remove the dualism, but it had a catastrophic impact on Zimbabwe. Another important factor analyzed in this thesis is for example the Economic Structural Adjustment Program from the 90ties. The thesis is also focused on macroeconomic indicators that fall behind through the years and it explains the reason for their downfall. The whole thesis shows the reasons that made once a country with a good position compared to other countries of Sub-Saharan Africa to a country facing miserable conditions today.
