Kindergartens catering with focus on preschool age children

The diploma thesis "Kindergartens catering with focus on preschool age children" is focused on the catering services of the facility. The thesis is divided into a theoretical part which included the development of the child, the dietary requirements of the organism at certain periods of life and, last but not least, the institution for upbringing and education of preschool age children-kindergartens. The practical part of the thesis is devoted to the research in selected kindergartens. Institutions are selected to transcribe catering in the capital city, town and village. In the comparison of kindergartens, one kindergarten is selected in the particular location, where a survey was carried out. The result of the survey is the filling of the consumer basket in selected kindergartens, which corresponds to decree no. 107/2005.
Selection of gluten-free food from the perspective of diagnosed celiac

This diploma focuses on the selection of gluten-free foods from the perspective of a diagnosed celiac. In the theoretical part is described the history of celiac disease, anatomy and physiology of small intestine, pathogenesis, manifestation and forms of celiac disease, diagnosis, screening and complications from celiac disease. It also describes a treatment of celiac disease which shows inappropriate and appropriate aliments in gluten free diet. One chapter deals with labeling of gluten free foods in the Czech Republic and in Canada. There is also a comparison of the Czech Republic and Canada regarding health care, government and restaurants offering gluten free dishes. The aim of the research is to map the selection of gluten free foods in people with diagnosed celiac disease, the second target is to explore differences in food selection in the Czech Republic and Canada. The third objective is focused on factors influencing the choice of gluten free foods. The research was conducted through a questionnaire survey. Lactose intolerance and diet solution

This bachelor thesis deals with lactose intolerance and dietary solutions. The work is divided into a theoretical and practical part. The theoretical part describes lactose intolerance, for example pathophysiology, incidence, clinical presentation, diagnosis, complications and treatment. The importance of drinking milk for children is explained in the chapter called Milk. The theoretical part is mainly devoted to dietary solutions. Lactose tolerance and principles of a low- lactose diet and lactose-free diet are described there. The table below contains an overview of common dairy products, including their hidden lactose value. Food which should be eatten, if lactose intolerance appears is described in the food section. This section is divided into naturally lactose free, reduced lactose and lactose free and alternative foods. The theoretical part also includes nutrition recommendations in cases of lactose intolerance. The practical part is about public knowledge of lactose intolerance. The aim was to determine if the respondents were familiar with the basic characteristics of the disease, with dining options for people with lactose intolerance, complications associated with the disease and whether they consume milk and dairy products or not.
