The effects of method of castration on quality of pork
Polcar, Bronislav ; Čítek, Jaroslav (advisor) ; Daniel, Daniel (referee)
The aim of this thesis was to assess the effect of the method of castration on the characteristics of pork and assess the effect of gender on the composition of a carcass. Carcass value is expressed in quantitative and qualitative characteristics that affect the value of the carcass. The quality of the carcasse is also involved internal factors which influence gender significantly influences the composition of the carcase and quality. Significant impact on meat quality in fattening male pigs have boar odor. Boar odor is strongly linked to surgical castration, which appears to be an effective solution for eliminating undesirable odors. Nowadays in the European Union there is a higher pressure on pigs welfare and thus to enforce the ban on surgical castration of piglets which is painful and stressful. Therefore is one of several options to eliminate boar odor using an immunological castration, which is nowadays the subject of many studies and brings very positive results. The purpose of our test was to compare groups of barrows, gilts, entire boars and imunocastrated boars and monitor the composition of the carcasses, meat quality and level of skatole and androstenone and confirm the hypothesis that the influence of various types of castration of boars, barrows and imunocastrated boars show different quality pork meat. Significant effect of gender on the composition of pig carcasses was proved whenboars and imunocastrated boars achieved the highest growth ability. On the contrary, gilts had the lowest growth ability. During fattening was determined highest daily gain in a group of barrows at favorable feed conversion and higher daily consumption compared to other groups of pigs. Also, barrows achieved best results in some parameters of carcass value, such as carcass weight and carcass yield of the hull on the contrary lean muscle ratio had the lowest percentage in comparison to other categories. Barrows were characterized by the highest thickness of back fat. A higher ratio of back fat was also determined in the group of imunocastrates who are otherwise characterized by good growth ability and quality of the carcass hull, whose parameters equal group of boars. The immunological castration of imunocastrated boars caused weight reduction of sexual glands and stopped their physiological activity and that led to lower concentration of androstenone and skatolebelow the level of boar odor. Boar odor-causing substances exceeded the levels of acceptabilitytwice in the group of male pigs. The group of gilts was evaluated with best results in major meaty parts ratio of both weight and percentage of weight of the carcass of the hull. Gilts were characterized with the highest meat ration the leg and in the roast. Boars had the best neck ration and weight and imunocastrated boar had the best shoulders parameters. Influence of gender had no significant impact on the quality parameters of meat.
Influence of humic substances on the broiler chicken´s meat
Novák, Tomáš ; Bušová, Milena (advisor) ; Daniel, Daniel (referee)
Due to great popularity of the chicken meat, the breeders try to improve yield of meat and its quality parameters, which leads to the application of various food additives such as those based on humic compounds. Those humic matters are used for their positive influence over the immunity system, metabolic functions and adaptability of the livestock organisms. Literature review sums up the experience with broiler chicken breeding and feeding. Further it deals with meat composition and its characteristics. The last part contains information of humic compounds and their influence over the live organism and compares the findings about the application of humic preparation into the livestock food portion. Practical part of this thesis researches the influence of humic preparation Humafit over the qualitative and quantitative parameters of the broiler chicken meat. Two groups of chicken were observed, experimental one and control one. Feeding of these two groups was held at the same time, whereas the experimental group was being fed with 200 ml of Humafit per 1000 l of supply water from 10th to 20th day of feeding. The research did not prove statistically important differences (p > 0.05) in chicken corpse weight such as in weight of each parts of the corpses. Differences in the protein content in the breast muscle were also not statisticaly demonstrative such as pH value of the breast and thigh muscle. Total amount of heme pigments in breast muscle of the experimental group was higher and this difference was statistically important (p = 0.049). The breast muscle of chicken in the control group showed up higher binding capacity for water, this difference was statistically important (p = 0.041). This finding correlates with sensory analysis results (|r| = 0.691), when the panelists rated the meat of the control group chicken as more flavorous. There is disunion among scientific studies in the opinion of humic compounds influence over the livestock organism. It is not possible to make a definite evaluation of humic compounds influence over the meat quality, because qualitative and quantitative parameters of the livestock meat depend on the number of intravital and external factors which can affect the experiment results.
Organoleptic characteristics of the venison and venison products
Henrychová, Marie ; Kouřimská, Lenka (advisor) ; Daniel, Daniel (referee)
This thesis is focused on the organoleptic properties of game and farm animals meat. Some attention is dedicated to the game meat products too. Hypotesis Organoleptic properties of game meat are statistically different from meat of farm animals was evaluated. Comparison of the scientific publications concering this topic was made. Organoleptic properties are dependent on physical and chemical attributes, thus some of these important attributes are discussed in this thesis. Results of this thesis show, that there are significant differences between organoleptic properties of game and farm animals meat and the hypotesis is valid. Within chemical and physical properties of compared kinds of meat there are significant difference especially in fat content and fatty acids profile. Game species presented in this thesis have lower fat content and also more favourable fatty acids profile and especially content of unsaturated fatty acid is higher. Significant differences were also in nitrogen compounds content, amino acids composition and haem pigments content. Higher moisture content was often presented in game meat. Differences in protein content were not significant, but several differences were found in the protein composition. During sensory evaluation significant differences were found in intensity and pleasantness of flavour, tenderness and juiciness of meat. Further differences were also found in color. Specific properties of game meat are transfered also to the game meat products. But in products differences are soften by the use of other components, such as other kinds of meat or food additives.
Possibilities in vaccination of dogs and cats
Čejková, Štěpánka ; Berka, Pavel (advisor) ; Daniel, Daniel (referee)
This bachelor thesis deals with the vaccination problems of domestic dog (Canis lupus familiaris) and domestic cat (Felis silvestris catus). The first part describes the basic information about the immune system to better understand formation of protection against infectious diseases in the form of memory cells, the principle of vaccination. Attention is also paid to the conditions to achieve the desired result of vaccination, including knowledge of the causative agent, the right technology of making vaccine, appropriate vaccination schedule, a suitable method of vaccine application and immunocompetent healthy individual, which will be able to react correctly to application of the vaccine. In veterinary medicine there are most commonly used vaccines with weakened or killed pathogens. Application is carried out mainly in the subcutaneous tissue or muscle, but the latest studies have shown significant benefit of application to the nasal cavity in connection with diseases affecting the respiratory tract. The primary vaccination of dogs and cats begins at their age of 8 to 12 weeks. It is necessary to carry out at least one revaccination at the age of 3 to 4 weeks after the primary vaccination. This revaccination serves as a stimulation of memory cells. In case of negative epidemiological situation two or even three applications can be made. Notwithstanding the fact that the memory cells in the body of an individual persist for a long time, yearly booster vaccination is still recommended for the majority of diseases. In the case of rabies, for some vaccines this revaccination is implemented once every three years. In the Czech Republic only the vaccination of dogs against rabies is required by law. Other diseases can be vaccinated optionally, depending on the disease situation, the use of dogs (hunting dogs, service etc.), and the possibility of travelling with a pet abroad. In connection with the vaccination, the basic information about infectious diseases of vaccinated dogs and cats are listed in this bachelor thesis. As a part of this thesis a survey to find out awareness of dogs and cats´owners was carried out about the possibiliy of vaccination (and its use). These results are presented in graphs and provided in an appendix at the end of this bachelor thesis.
Evaluation of reproductive parameters in a herd of cattle
Blatský, Jaroslav ; Čítek, Jaroslav (advisor) ; Daniel, Daniel (referee)
The aim was to evaluate the reproductive performance of the dairy herd. Data were obtained on the farm ZZN Strakonice center Sousedovice from cows culled during 2015. The center treats an average of 250 cows that are kept free of manure and farm milked at four milking robots Lely - Astronaut. The most important reproduction traits were summarized and subsequently statistically processed. Monitored were fertility parameters, milk yield and lifetime production, which were derived from a zootechnical records and monthly reports from milk recording system on 100 dairy cows. With increasing milk yields were deteriorating reproduction parameters such as artificial insemination index, insemination interval and number of days open. For the entire group of cows was monitored milk productivity and reproduction parameters related to parity. The average milk yield in the selected cows was 8579 kg of milk per lactation. With parity increased milk yield per lactation. As well as the average daily milk production and average milk production per day of calving interval. Insemination index and days open length were significantly longer for 2nd lactation where a large increase in milk yield negatively affected these parameters. Furthermore, we evaluated the lifetime milk production. The highest average yield per lactation reached cows cullet later than on 4th lactation. In these cows was detected milk production per lactation for 1000 kg higher than in cows that finished only 2 or 3 lactations. The lowest average yield per lactation was in cows that finished only two lactation. Furthermore, cows were evaluated according to the lactation curve. It was found that with increasing lactation persistence increases milk production but deteriorate the reproduction traits as a days open, insemination interval and insemination index. It was also found that with increasing lactation persistence decreases the longevity. Furthermore, we observed the level of milk productivity according to insemination index and found, that with increasing milk production increase insemination index.
