Bachelor thesis mainly deals with the selection of gluten-free raw materials, their availability and dietary composition, which are designed for a gluten-free diet. It focuses on the advantages and disadvantages of specific raw materials in the production of gluten-free bakery products and beer. Briefly introduces the issue of celiac disease, its symptoms and treatment. It also states the legislative provisions relating to celiac disease in Czech Republic. It focuses also on the Czech insurance contributions for patients diagnosed with celiac disease.
Nutrition as a nursing problem in children with celiac disease

The Thesis consists of the theoretical and research part. The theoretical part of the Thesis deals with the anatomy and physiology of the small intestine of the child. It also brings detailed characteristics of celiac disease and for the sake of interest we mentioned the interesting history of coeliac disease. Furthermore, we focus on the types, symptoms, diagnosis, treatment and complications of celiac disease. Substantial part is devoted to nutrition, where we focus on its basic elements and, gradually, we walk through proper nutrition in children. In descending order we go through individual child periods, from infancy to adolescence, mentioning what nutrition is the best for the particular age period. The next chapter gives the detailed description of the gluten-free diet which must be kept by the coeliac patients during all of their lives. Research part of the Thesis is processed using the quantitative strategy. The objective of the Thesis was to find out which problems the coeliac children appearing at the paediatric gastroenterologist and the general practitioner for children and adolescents suffer from, as well as the assessment of these problems using nursing diagnosis: 0002 Imbalanced nutrition: less than the organism needs. The second objective of the Thesis was to determine differences in the incidence of celiac disease in children by sex and age when diagnosing this disease. The objectives faced 2 hypotheses. H1: There is a difference in the incidence of determining the signs and related factors in children registered in gastroenterology clinics and general paediatricians. H 2: The incidence of celiac disease will be higher in girls than in boys. To collect data, we chose a content analysis of documents, in our case, analysis of medical records of children at a gastroenterology outpatient department and at a general practitioner for children and adolescents. The data were being collected in the period from January to February 2014. The survey was conducted at the paediatric gastroenterology office of MUDr. Ivana Ženíšková in České Budejovice and at the general practitioner's office for children and adolescents of MUDr. Zdeňka Soukopová in Náměšt nad Oslavou. So as to process the research data we developed a research form - a record sheet, which contained 24 defining characters and 6 related factors from the nursing diagnose: 0002 Imbalanced nutrition: less than the organism needs. Furthermore, the research form included some demographic data: age, sex, home address, family predispositions, duration of breastfeeding, cage of the child at the introduction of complementary feeding, age when the disease is diagnosed, and what foods were first administered to the child. Another point we decided to include in the research form was the defining characteristics and related factors supplemented from the medical records of children. When processing the research data we used the linear method and recorded frequency of the incidence. The results of NANDA diagnoses validation were processed according to Fehring's DCV where we calculated the arithmetic mean, assigned appropriate values and included them in summary tables. The values in the tables are marked in colours, where the green colour marked very significant characteristics according to Fehring and the red one marked very little significant characteristics according to Fehring.
Gluten-free diet and the possibility of enriching the diet coeliacs

This thesis deals with the gluten-free diet and its possible enrichment. It is divided into two parts. The first part includes chapters such as history of gluten-free diet, basics of a gluten free diet, the first step in the introduction of a gluten-free diet, gluten-free food labeling legislation and the use of alcohol on a gluten-free diet. The practical part is focused on enriching the diet celiac patients. I focused on the preparation of bakery products for celiac, I have designed and practically tested recipes gluten-free pizza, buckwheat corpus, gluten-free sourdough seedcake and gluten-free cake with homemade pudding and caramel. The finished gluten-free products were submitted after baking consumers who rated their sensory quality. If necessary, an adjustment was made to the recipe and re-perform sensory evaluation. The prepared products were evaluated positively. Selected coeliacs decided suggested products to include in their diet.
Subjective opinion of people suffering from coeliac on availability of products for people with coeliac on the Czech market

This bachelor thesis deals with subjective opinion of the people suffering from celiac disease on the availability of products for celiacs on Czech market. At the beginning, there were two main objectives. The first main objective was to explore whether the products available on the market in the Czech Republic cover the needs of celiac patients. The second objective was to explore whether the patients are satisfied with these products. The research questions were set as follows: "In which stores patients prefer to do their shopping?", "Are patients satisfied with the price of products compared to their quality?" and "How patients evaluate the sensory aspects of food?" The theoretical part of my thesis describes celiac disease with all its difficulties. It briefly describes the process of its recognition and its current occurrence in the Czech Republic and some foreign countries. It also describes the clinical picture and the types of forms of celiac disease at a patient, complex diagnostic procedures when there is a suspicion of this fatal disease, malnutrition risk, associated diseases and possible complications. Last but not least, it is concerned with the gluten-free diet, which is the only current treatment for celiac disease. Along with that, the thesis is dedicated to raw materials and food for celiacs: accessibility, large financial cost coverage of gluten-free diet, product labelling and legislation. In order to develop the research part, the method of qualitative research was chosen, specifically, a semi-structured interview. The interview contained thirteen questions, so as to achieve the objective of the thesis and so that the research questions given in advance were answered. The research sample included five celiac patients, both men and women in the age range of 18 to 49 years. Data were being collected from January 2013 to April 2013. The results of this work show that patients prefer to combine shopping in the so-called "healthy food stores" where the shop assistants have more knowledge on the issue and are able to help them to choose the most suitable products, and shopping in large stores and the "gluten-free" departments there. Respondents also claim that in supermarkets, the shop assistants are not able to help and often do not even know what the celiac disease is. All respondents also shop in their area of living, which proves the increasing availability of gluten-free products, which is sufficient to cover the common needs of celiac patients. The market situation in the Czech Republic in the last ten years has changed dramatically to the better and there is no specific food that respondents would completely miss in the stores. When shopping, the respondents look for specific, pre-tested products. On the contrary, patients are less inclined to on-line shopping. Another significant criterion for selecting gluten-free food is also its price. The financial demands of a gluten-free diet are a big problem, because gluten-free raw materials and food are from 4 to 10 times more expensive than the same commodity containing gluten. Patients are therefore often forced to break the rules of their diet, because they simply do not have the finances for the gluten-free products. Sensory aspect of gluten-free products is also not evaluated very positively by the patients. The problem is seen mainly in bakery products such as bread, rolls and buns. The structure of these products is not suitable, as it often crumbles and breaks, or, on the other hand, is sticky. They would also like to extend the range of pastries to avoid stereotypes in their diet. Another sensory aspect of bakery products-taste was not evaluated positively as well. However, they do not see the difference in warm food and mostly in home-made sweet pastries such as cakes or pies.
The testing of celiac disease in connection with osteoporosis

My Bachelor´s thesis deals with the examination of celiac disease in connection to osteoporosis. The aim of the thesis was to specify the level of antidotes against tissue transglutaminase in the class IgA and IgG in the serum with osteoporosis diagnosed patients, to interpret, based on the results of the study, possible link between osteoporosis and celiac disease as well as to compare the outcome with scientific data. I focused on the present knowledge of osteoporosis and celiac disease in the first part. As for celiac disease, I described its history and characteristics. I also paid attention to diagnostics of celiac disease with the assistance of laboratory serological tests ELISA. I mentioned the free-gluten diet treatment after that. As regards osteoporosis, I described its history, symptoms, forms, perils and complications which the disease causes. I conducted the methodical part of my work in the biochemical haematological laboratory Stafila where I work, with its seat in České Budějovice. As for measurements, I took them in the department of microbiology, where immunologic tests are also taken. I carried out the screening of celiac disease from serum, namely the determination of antidotes against tissue transglutaminase in the class IgA and IgG, with the aid of ELISA - a sandwich method. I took measurements with 58 osteoporosis diagnosed patients. I obtained the sera thanks to the supervisor of my thesis Mrs. Marie Ládová, who is at the head of an osteological outpatient department in České Budějovice. I stated the serological markers of celiac disease with the assistance of enzymatic immunoanalysis conducted on automatic analyzer Nexgen Four, which was provided by the firm Test-Line. I describe the analyzer, its specification, checking and calibration of the gadget together with determination checks in this part of the thesis. Additionally, there is described the principle of the method ELISA- sandwich, which is non-competitive enzymatic immunoanalysis. At the end of the section there is depicted the methodical procedure of my work, the preparation of working solutions and checks, the preparation and dilution of samples for analysis and working procedure for semiquantitative interpretation with positivity index and for quantitative interpretation U/ml. I continued with my own measurements. while respecting standard operations procedures of the laboratory Stafila, a limited liability company. The results of my measurements are processed in the third part of the thesis. The acquired results are given in a table: quantitative interpretation of the antidote against tTg IgA and IgG (U/ml) level in the sera of the osteoporosis diagnosed patients. Then I presented a graph interpreting the proportional relation of the antidote against tTg IgA and IgG levels in the sera of the osteoporosis diagnosed patients. There are included calibration graphs for tissue transglutaminase IgA and IgG and tables of the obtained data of checks for the methods in the results. 3 out of the 58 examined samples of osteoporotic patients were positive, they had the level of antibodies higher than 22 U/ml. One of the samples had marginal figures, which means it had the antidotes against tTg IgA an IgG between 18 and 22 U/ml. Positive results were found with patients born in 1976 and 1978. A patient born in 1962 appeared to have a marginal result. The acquired antidote figures against tissue transglutaminase in the class IgA and IgG are presented proportionally in the graph 1. 3 out of the 58 measured samples were positive, which represents 5%, and 1 sample was marginal, which is 2%. My analysis is based on the availability of the examined material and the potential of our laboratory. Celiac disease is an illness which was not paid much attention to in the past. Hypothesis about the link between osteoporosis and celiac disease has been proved.
Value and utilization of quinoa (Chenopodium quinoa Willd.) in human nutrition

Quinoa (Chenopodium quinoa) is a nutritionally high-quality crop with versatile utilisation. The aim of this thesis was to summarize the knowledge about the composition of the seeds of quinoa, their processing, utilization for human nutrition, utilization in diets; the influence of consumption of quinoa on human?s health, products on the market and the situation of growing and availability in the world and in the Czech Republic. Quinoa does not contain gluten, so it is a suitable foodstuff for people with the diagnosis celiac sprue. Now, we can expect that the number of people with this diagnosis will sharply increase in the Czech Republic, because of planned more detailed screening of the celiac sprue occurrence. Quinoa is as an excellent functional food high in quality protein and with positive impact on the human organism; therefore it is suitable for the extension and enrichment of diets healthy people too. The thesis includes also photographs of quinoa growing and the results of a questionnaire survey targeted to awareness of quinoa among people with celiac disease.
