There are also described typical varieties for the location and local growers and winemakers. The chemical and sensory analysis of two samples is attached at the end of thesis.
VOC Modré hory

The bachelor thesis describes VOC Modré hory and characterification them. The aim of this work is more closely describe VOC Modré hory and to compare this association with other VOC. Beginning of this thesis describe appellation systems in other countries. Next chapter describes the terroir and their factors. Following chapter describes geological, soil and climatic conditions of mikroregion Modré hory. This thesis contain also conditions wine classification, description of varieties and members of the VOC Modré hory. This association has been compared with another VOC and has been proposed a solution for better customer orientation and highlighting terroir for wines labeled VOC.

The subject of the bachelor thesis is the wine villages Lechovice, Borotice and Božice. Description of geological, soil and climatic conditions and their influence on grapevine. Furthermore, the thesis deals with the description of given wine-growing villages, their history and vineyards in the cadastre of municipalities and important producers. Vineyard trails are described from the point of view of geological, soil and climatic conditions of locations, variety composition and method of management. Part of the thesis is chemical and sensory analysis of 11 characteristic samples of wines for this area.
Charakteristika a specifika VOC Pálava

The French, or appellation system of classification and labeling of wines is based on so-called "terroir". It is a French term, which literally means "soil, land". In the Czech Republic, the French system has been recently becoming an alternative to the so-called German system, in which wines are classified according to the sugar content of grapes (expressed in kilograms of natural sugar in 100 liters of grape juice), regardless of the region of origin of grapes. The French system is the only system used in traditional wine making countries such as France, Italy or Spain. However, for instance in Austria the appellation system has existed and served parallelly with the German system for about ten years. In the Czech Republic, the use of the French system began in 2009, when the respective administration authorities for the first time granted permission to use the label "Original certification wine" (Víno originální certifikace -- VOC [A.O.C.]). VOC Znojmo became the first recognized appellation in the Czech Republic. At the moment five wine-making subjects in the Czech Republic are authorized to use and grant in accordance with valid legislation the VOC label, VOC Pálava being from 2012 one of them. Growing, production and sale of wines labelled VOC require observation of valid legal regulations (Viniculture and Wine-making Act in particular), as well as requirements defined in statutes of particular civic associations and conditions specified for classification of wines. Each civic association determines its own qualitative parameters of wines produced by its members, and oversees strict adherence to the parameters. VOC Pálava is, with regard to above mentioned facts, a specific appellation within the Czech Republic for several reasons. One of them is its locating in Pálava Landscape Protected Area (CHKO). Its specific natural (geomorphology, climate, paedology etc.) as well as cultural conditions enable production of wines of Welschriesling variety, which, through labor of local vinicultural and wine-making masters, reflect the complex character of the unique and unmistakable Pálava terroir.

The thesis in the first part focuses on the concept of terroir, its explanation and the interpretation of the authors who deal with the theme. There are described in particular terroir physiological factors as crucial for Spain. Then in the other part are defined climatic, geographical and soil conditions of the Iberian Peninsula which are essential for the expression of terroir in Spanish wines. It is briefly mentioned the historical context of viticulture and winemaking sector on the Spanish territory. There are mapped the most important appellations in the various autonomous regions of Spain, primarily in terms of geographic location, climate, soil, cultivated varieties and typical wines. The Rioja region is described in detail and selected wines from this region subjected to analytical and sensory analysis. Subsequently there is formed the aroma profile at each given wine. The purpose is to gain insight into the manifestation of physiological components of terroir DOCa Rioja wine.

Srovnání kvalitativních parametrů k hodnocení hroznů a vín ve Francii a ČR

First part of the thesis is mapping the history of protected certification of origin for agricultural products in France and its impact on local viticulture. As next step current situation and appellation system is described from the perspective of main winemaking regions as well as more granular distinction within each area or respective appellation. Second chapter is dedicated to the term terroir with all its components influencing wine quality. Special attention is paid to the possibilities and current utilization of terroir in Czech Republic wine making, including the soil types and local grapes variety. Following part is summarizing qualitative wine categorization in Czech Republic from 19.century until nowadays. New system of wine with certificate of origin (VOC) was introduced listing current and potential members and wine classification criteria and requirements. The part in concluded by wrap-up of current situation in Czech Republic based on discussion with wine professionals as well as ordinary consumers feedback. French system is evaluated separately. Closing part is comparing both country systems pointing out main accordance and differences enhanced by prognosis of their further development.
Charakteristika a specifika VOC Znojmo

The bachelor thesis deals with the appellation system of Wine of the original certification, VOC of Znojmo. It was as the first one introduced in the Czech Republic in the Znojmo wine region. The thesis characterizes and describes the specifics of VOC Znojmo. There is described the creation of the first appellation system in the Czech Republic, the way of identification of VOC wines, selected wine varieties, and production conditions of wine of VOC Znojmo. There are also introduced individual wineries, which are members of the association of VOC Znojmo. The thesis, in more detail, characterizes VOC Znojmo in terms of soil, geological and climatological conditions. Furthermore, there is described the code of rules of VOC Znojmo, and there are compared and highlighted the differences between other VOC. In the independent thesis, there are evaluated sensorily and compared wines, which was classified in the association of VOC Znojmo with the wines, that do not have the mark of VOC Znojmo.

There is not an unified system for wine designation in France. Local areas are divided into individual appellations and each appellation has own rules wherein what is accentuated the most is the origin of the wine. The following thesis deals with the famous wine region Bordeaux in terms of history, terroir and distinctive appellation system. This historical region is considered as the most prestigious and famous wine district in France and the best red wine producer in the World. The most qualitative wines symbolize only 3 % from the whole production but these are the best that can be produced. The most popular region si Médoc with its 1855 historical appellation system. Another regions are Saint-Émilion, Pomerol, Graves and Entre-Deux-Mers.
About the Cheese from Mokrá in Other Perspective

The topic of the thesis is the production of cheese in a slovak village Mokrá. It is described from the perspective of Actors-Network theory and from the practice-turn point of view. The thesis combines the results of an ethnographic research on the location with an experimental ethnographic writing. It all comes from the notion, that cheese can be considered as an actor, that is able to influence physical and socio-cultural life of the cheesemongers. The cheese is taken as hybrid, natural, discursive and collective character. The author focuses on the agency of cheese primarily in the relationship to the bodies of the cheesemongers using the concept of practical understanding, as well as in the relationship to the landscape using the concept of terroir and taskscapes. In order to see the phenomenon of homemade cheese from a new perspective, the author writes from different space-time perspectives. At the beginning the space-time perspective is extended, so cheese is perceived as an event, what enables us to find new actors in the cheese production process. Afterwards the perspective is reduced to the world of the lactic acid bacteria to discover their impact on the cheese production, its taste and quality and on the discurse of micro-biopolitics.
