In this work I deal with the similarities and differences between the laws of the Czech Republic and Russia in the field of food production, safety and labelling. The aim is also to find out the priorities of states in the food industry, especially the production of canned meat. The technology of canned meat production and related processes is described. The relevance of research into extending the shelf life of food is growing due to factors such as population growth, declining economic activity in countries, as well as the more efficient use of food raw materials. World economic and political instability forces states to accumulate and maintain available resources. Analysis of the methods of different countries and nations allows us to determine the most optimal vector of development.

Dopady přepravy na welfare zvířat a kvalitu masa
Trčková, Karolína
The aim of this diploma thesis on the topic of Impacts of transport on animal welfare and meat quality was evaluate influence of individual factors on meat pH values. The pH value measured 24 hours after slaughter serves as an indicator of the meat quality. The degree of stress on animals during transport and handling before slaughter can be identified according to pH24. Stress has a negative effect on animal welfare and welfare affects the quality of the meat. Three types of vehicles transporting animals to the slaughterhouse were evaluated in this diploma thesis: a truck, a tractor with trailer, and a car with trailer. The experiment was conducted during 2021. A total of 228 animals were evaluated in the experiment (144 heifers and excluded dairy cows, 85 bulls and oxen). The most used type of vehicle was the truck. The shortest transport took 15 minutes and the longest transport took 180 minutes. The shortest time from unloading animals to slaughter took 10 minutes and the longest took 495 minutes. The maximum number of transported animals in one vehicle at a time was 7. The summer was the worst season for transport of animals, when the pH24 was >5,7. The high temperatures had a negative effect on pH24. The least favorable pH was found at temperatures of 22-31 °C. The sex of animals was not proven to have an impact on the pH of meat. Ideal pH was found by males and females. According to the pH value, a car with trailer was the least suitable for transport. Value of pH24 was 5,70 and it was higher than in other vehicles. The number of transported animals in one vehicle at a time did not affect pH values. It means that 7 animals could be transport without negative effect to the welfare. A transport lasting 15-180 minutes did not adversely affect the pH values. This time of transport was favourable for animals. The rest time of the animals in the slaughterhouse, from unloading to slaughter, did not affect the pH. Animals rested 10 495 minutes at the slaughterhouse. No pH was found to affect the quality of the meat in any time frame. No pH level reading, indicated meat defect during the experiment. From the obtained data, it was evaluated that transport, including handling of animals before slaughter, did not lead to disruption of welfare of animals and meat quality.
