In work named „The quality of sources for gluten – free food“, the resources, legislation and overall requirements for the gluten – free food making were described. Furthermore, the symptoms and specification of celiac and other forms of gluten – related diseases, as well as the requirements on gluten – free diet were displayed in work. In experimental part, three recepies of both pancakes and omelets were made on the De-partment of Food technology, Faculty of AgriSciences, Mendel univerzity in Brno. To both groups (pancakes and omelets), the one commercial product was added for evaluation. The evaluation was made by ten evaluators via the sensoric questionnaire. The evaluators were trained and instructed beforehand. As the best recipe came out pancakes made of amaranth flour and omelets of buckwheat flour.

Injuries of the residential social service population, causes, prevention.

The thesis is focused on health and injuries in nursing homes and health care facilities and their prevention. Given that accidents cause high morbidity and mortality of the elderly, it is important to think about prevention and the search for the causes of these accidents. The main objective of the empirical part of the study was to determine the causes of clients accidents in social and medical facilities and compare both types of facilities. For research in the empirical part of this work has been used quantitative research strategy, method of questioning techniques of data collection questionnaire. Research has shown that 87% of respondents suffer from musculoskeletal diseases. 44% of respondents, women more often than men, had received the fall and subsequent hospitalization. The thesis may help to understand the issues of accidents of the elderly and health effect on the quality of people's life living in health and social care facilities.

The offer of activation programs at senior house Kopretina in Plzeň

Our population is aging, people live longer. The number of the elderly who are not self-sufficient and need help of other person has been growing. These elderly often do not have a family who could either take care of them or are not able to take care of them. One of the possible solution for such people is to use services of Homes for the Elderly. An important part of care of healthy body is care of psychological (mental) well-being. It is proved that these two areas interact and in the spirit of this interaction, leisure activities in Homes for the Elderly are offered. They offer meaningful use of leisure time to the elderly and also possibility to meet new people and find new friends to spend their leisure time with. The thesis is divided into two parts. The theoretical part deals with theoretical ways and solutions connected with old age, with needs of a human and leisure activities of the elderly and it also deals with social services for these people. It also describes the Home for the Elderly called Kopretina in the town of Plzen, where the research took place. Qualitative research and semi-structured interviews were applied to gather data in the empirical part. The objective of the work was to find out whether the elderly in Kopretina are satisfied with the offer of activation programmes. Three sub-questions were set to answer the main pre-set research question. The main research question led to the confirmation of the objective. The information gathered through the research may be used to improve the offered activities in the Home Kopretina. The research also showed which activity in the Home is wanted.
