The bachelor's thesis deals with the method of the red wine production called thermovinification. In the thesis there is detailed description of the technological process used, every single step of production is described as well. The thesis is concentrated on wine components and the impact of thermovinification on them. Thermovinification is also compared with the classical way of wine production and thesis shows its pros and cons.
